One Shot

I keep thinking today is Tuesday for some reason – it makes me happy when I look at the calendar and see that today is actually Wednesday. We’re halfway through the week, people – get excited  ;)

I ended up not having a snack this afternoon, and now I’m happy I didn’t! I’m actually working on a baking project right now, so I’m probably going to be trying it once it’s ready.

Dinner tonight was leftovers of the veggie chili with some avocado, scallion + hot sauce.

Nick and I were trying out new places for pictures tonight, so we’ll see what happens in the next few weeks! One thing we need to figure out is the lighting in the dining room – I love using the table as the background for pictures, but the normal lighting in the room makes shadows, so we’re working on it  :)

I think my Oikos recipe will turn out well! I’m planning on entering this baked good in their contest, so I should have a post about it in the next few days (once I test + photograph them).

They’re not done yet, though, so we’ll see. I kind of just threw things together that sounded good and am hoping for the best.

I’ve got to get these out of the oven and get ready to catch up on Top Chef – I slept through the episode last week, so I have to see what I missed!

Pizza Party for 2

Despite the rain outside, Nick and I had a fun pizza party inside for lunch today.

I still had some leftover pizza from the other night, so  brought 2 slices for each of us today.

The crust wasn’t as crispy, but it was still good!

Green beans and a diced tomato. It seems as if I don’t have stuff to make a good salad to go with my pizza, any other side is totally random. I mean, who eats green beans with pizza?

The rest of our “pizza party” also included catching up on the Halloween Office episode.

Nutella Makes It Betta

Well, today is nasty. I think they just have “100% chance on rain” on the weather stations here, which rarely happens.

It is pouring down rain and has been since last night – so I’m going to have to just pretend that it’s nice outside!

The one thing I hate about having rain in the mornings? I can’t take my breakfast pictures outside. Natural light is so much better, but that was not an option today unless I wanted to eat a soggy breakfast.

Another quick breakfast! I got up late again today, so no time for oatmeal.

But I was excited for this.

I made a Nutella + Jam sandwich on 2 slices of Nature’s Pride whole wheat bread – the best bread, with the best spread, and the best jam.

Then I took the entire sandwich and put it in the toaster for a few minutes while I sliced my apple.

A regular Nutella + jam sandwich is good, but a toasted one? Even better.

Now if I can just find my rain boots…

Chilly Chili

This daylight savings is still messing me up – we’re already done with dinner, but I feel like it’s 9 pm, not 7:30! It doesn’t help that it’s totally gross here today: gray, gloomy, chilly, and pouring down rain.

My snack made my afternoon a bit better today – I brought a blueberry Oikos from Kristina at Stonyfield (thanks again!) and some trail mix.

This trail mix is one we got from Walmart, but I forget the brand. It has whole raw almonds, almond slivers, raisins, craisins, and dark chocolate.

It’s awesome in yogurt – and oatmeal! The dark chocolate is just sweet enough to counter the tart yogurt + dried fruit.

We drove home in the nasty weather and I got started on dinner as soon as I had our lunch dishes washed and out of the sink.

Do you call anything with chili powder “chili”? Because I think I do.

Exhibit A: This recipe has no ground beef at all or any other normal chili ingredients, but it has chili powder… so I’m calling it a chili  :)

Veggie Barley Chili

  • 3 cups water
  • 1 cup quick cooking barley
  • 1 can kidney beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can Rotel
  • 1 can corn, drained
  • 1 cup green beans (frozen/thawed or fresh)
  • ancho chili powder (about 2 Tbsp?)
  • cumin (1 Tbsp)
  • garlic (1 Tbsp)
  • salt (1/2 Tbsp)
  1. Heat water to a boil and add in Rotel and barley. Bring down to a simmer and let cook 5 minutes.
  2. Stir in beans, corn, and green beans and let cook 5-10 more minutes or until barley is cooked.
  3. Stir in seasonings to taste.
  4. Top with scallions and avocado (optional). And hot sauce!

I’ve made a dish like this before, but I’ve never added green beans to it. I liked them in this! Plus, I liked having one non-starchy veggie in the meal. And avocado + hot sauce just makes everything better.

I’m having a Full Moon again tonight while blogging and watching some tv with Nick.

We like joking on people we see on tv. Case in point: Nick had it on the speed channel tonight and they have this game where guys pick the time they think a driver will finish in on this short track. There some funny roommates on there and Nick and I both just started imitating them – it was hilarious  :)   It’s always good when you can laugh at just about anything.

I’m ready for pajamas – night!

Blogger Goods and Awards

I don’t know what has been going on lately, but our office has been slammed! So busy…all day long. It does make the day go faster, but the emails are just nonstop. I would like to request that everyone quit sending things in so I can enjoy an empty inbox just for 5 minutes – think it’ll happen?

We still had some of those peanut-y noodles left, so I brought those today to finish them off.

Nick and I went and ran a few errands at lunch today. I finally got my rebate back from buying new contacts and needed to deposit the money. Thank goodness they rushed that to me – it only took 4 months or so?!? At least it finally showed up – I was beginning to think we just weren’t going to get it at all.

In fun news, Olga gave me an award!!

1. I am left handed, but I use scissors and throw things with my right hand.

2. I know Tommy Boy (the movie) by heart and can finish any scene.

3. The very first “real meal” I tried to cook in college was chicken cooked in salsa in a skillet…and I couldn’t even make that right. I thought I was doomed.

4. I am a huge worry wart – I play the “what if” game in my head all the time and it drives me crazy.

5. I had never had a cat for a pet until I got married. I think Roxy hated me at first for moving in with “her man”…but she tolerates me now. I was always afraid she would just attack me if I tried to pick her up! And sometimes, she does.

6. I still don’t like raw carrots, unless they’re cut into super thin strips.

7. I bit my fingernails until I was in high school when my family paid me to stop.

Now I get to pass it on!

Orange Obsessions

I’m running a bit behind, so I better hurry this morning  :)

Getting up a bit late will also explain why I’m not eating oatmeal – it just takes me too long to eat! I like to take my time, especially since it’s usually so hot, so no oatmeal this morning.

Nick and I toasted up the last of those sprouted grain cinnamon raisin bagels this morning. I topped mine with some laughing cow cheese + TJs pumpkin butter.

The laughing cow + pumpkin butter combo was perfect on the cinnamon bagel – although, I don’t think you can go wrong with cinnamon OR pumpkin. Like they say, pumpkin is the new bacon  :)

We also split one of our VA apples on the side.

Reality Bites

Blah…Monday is Monday and I’m just sad I’m not in San Francisco!!! This weekend was so much fun – I mean, how can you beat being around other foodies AND bloggers?!? Work is definitely not the same.

I just wish I was making my pumpkin french toast all over the country or just working with foodies and/or bloggers in some way. This weekend really confirmed my passions, and it was a great way to get me thinking of how those passions could possibly be a lifelong thing.

Who knows, right?

It’s always one day at a time.

And today was nuts. Work was crazy all day – non stop – my email never quit.

I ate lunch while putting together my final recap post of the Foodbuzz Festival.

I heated up some leftover peanut-y noodles and veggies  – it was easy to eat + blog at the same time!

This afternoon was ever busier than the morning! I was working, working, working, and took a quick break to make a tiny snack plate around 3:30 or so.

Kind of a weird combo, but I liked it! Almonds, a few dried apricots, and some crystallized ginger. Yum. I know Erin knows all about the ginger  :)   It’s addicting! That sweet burn is so good.

I ended up working until around 5:20 or so (from home!) – there were just a few things that I had to get finished today, so as soon as I shut down my computer, I finished up the grocery list and ran up to the store to get the few things we needed for this week.

I wanted to go shopping right at 5, but since that didn’t happen, we went the super easy route for dinner: frozen pizza.

While I would much rather have my own homemade pizza, this is what it was tonight. I bought a California Pizza Kitchen Margherita Pizza for me tonight and a different supreme one for Nick. I wanted to make sure we would have some leftovers for lunch since I didn’t make a big dinner tonight.

The closest grocery store here doesn’t have Kashi products, so this was the next best one I could get, based on the ingredients.

It tasted pretty good, but it’s hard to believe I was eating salmon and beef cheeks just 2 nights ago, and now I’m having pizza  :)

We each had a salad with our pizza and I remembered that we had these Almond Accents in the cabinet. They’re so good! Garlicky and crispy – the perfect salad topper.

We just finished watching a hilarious episode of How I Met Your Mother and now I think the only thing left on my agenda for tonight is to pack my lunch!

A good thing since today wore me out. I’m hoping I’ll be over the little bit of jet lag by tomorrow  ;)

Foodbuzz = Rockstars

Okay, where did I leave off?

Breakfast, right.

Okay, so after Nick and I ate that morning, he took the F-line down to Fisherman’s Wharf to walk around and take pictures while I toured around the Farmer’s Market with some other bloggers.

I had another cup of coffee while walking around that morning – this market was the largest farmer’s market I’d ever seen! There were foods I had never even heard of before and everything was beautiful and so colorful.

After walking around the market, a bunch of headed over to the hotel for our morning sessions. I had signed up for a Farm to Table discussion with the Chef at the Hotel Vitale and the manager/owner of Hearst Ranch.

It was really interesting to hear them talk about food and where it comes from – especially since we had both sides of the street (the one who raises the beef and the chef who buys/makes it for consumers).

I think the best thing (and most memorable!) was that they said “In order for something to be sustainable, it has to work for everyone”. Sustainability is such a huge thing right now, but I think that point often gets forgotten. If a process or method won’t work out for everyone involved (the grower, the buyer, the consumer, the middlemen, etc), it can never be a successful process.

I ended up having to leave the session a little early so Nick, Sabrina and I could catch a cab to where we were cooking at 12:30!!!

Ah!! After my latte that morning and the cup of coffee at the market – not to mention the ridiculous adrenaline rush – I was buzzin’ waiting for the Taste Pavilion to begin.

They had the crowds waiting behind velvet ropes – it was so surreal.

It was so much fun! The Nature’s Pride group and Foodbuzz did an awesome job of setting up our cooking stations and everything went so smoothly – pretty amazing considering none of us had ever cooked in a situation like this!

Needless to say, by the time my cooking time was up, I was just coming off a caffeine/adrenaline high and I ended up not even tasting most of what was in the room! I did try some things, and everything was awesome -

Before heading back to the hotel, Nick and I walked through Chinatown since I had never been. What a cool place! The stores and restaurants we passed had the coolest things and all the food smelled so good…but I had to keep my appetite for dinner.

My dinner pictures didn’t out great from that night – the lighting was strange in a few places, but the food was amazing.

Everything was delicious, and I loved that the dinner was put on with Outstanding in the Field. They have such a great mission – it was so cool to be eating dinner in a produce warehouse with the kitchen beside you and you just know that the food you’re eating is super fresh and grown from love and passion.

We all had different plates and the table was set up so that it went all throughout the warehouse. The food was served family style, which was fun but I cannot use chopsticks for the life of me! Eating was a challenge (and funny) but I did get to try everything.

This mushroom risotto was out of this world. The crispy mushrooms on top were like nothing I had ever had before.

I had also never had beef cheeks and they were so tender – it just melted in your mouth. The brussel sprouts were probably my favorite of the night  :) Perfectly roasted!

They gave out the Foodbuzz awards and so many people I “knew” won! It was so exciting!

I am extremely sad this weekend is over – everything happened too quickly, I didn’t get to talk to everyone, and I’m ready for the next festival already  :)

Thank you, thank you to Foodbuzz for an amazing festival weekend, for all the planning and thoughtfulness and the passion you have to get foodies together all across the world.

And a BIG thank you to Nature’s Pride for making it possible for me to attend.

Honestly, this was the biggest surprise of my life.

I would never have imagined that I would be cooking one of my recipes for anyone but family. I had no clue how to cook 5 years ago when I got married, so having my recipe chosen and being able to cook for other foodies is an experience I will never forget. It was a bit intimidating cooking for people who love food as much as I do, but I can’t tell you how fun and exciting it was.

These people at the festival are more than just bloggers – they’re my peers, my friends, my inspiration.

I think one of the most amazing things about this weekend was that it didn’t matter who you were talking to – you just got absorbed into new groups all the time. Everyone was friendly and talkative and hungry  :) Being around other people who love food as much as you do makes it easy to get along and find things to talk about. The conservation never stopped, and I loved every minute.

I just hope I don’t have to wait until next November to see everyone again!

 

 

 

 

 

 

 

Monday Blues

I cannot believe our weekend in San Francisco is already over and I’m back at work!

The past 3 days went by so fast – too fast – and I’m not ready to be back in my “real world” yet  :(

BUT, Monday is here…which means I’m going to be working in 40 minutes. And that means oatmeal for breakfast!

I enjoyed every breakfast I had in SF (especially that one at the hotel Saturday morning), but there’s just something about oatmeal that says “welcome home”.

It’s like a big hug in a bowl, isn’t it? That’s how I see it.

Today’s was pretty basic – I had 2 bananas that were getting ripe when we left, so I stored them in the fridge over the weekend while we were gone. This one was perfect to use today.

  • 1/2 cup oats, 1 cup water, pinch salt
  • 1/2 banana, sliced
  • 1.5 Tbsp crunchy pb
  • cinnamon

I’ve got tons of pictures to sort through today, on top of working, so I’m going to start doing that before work starts at 8.  I guess I better make some tea to get me going this morning.

I also have to get groceries at some point today since we have nothing in the house – we’ll see how that goes  :)   It’s going to be busy!

 

How was your weekend?

Time Warp

Isn’t it strange when you’re traveling and, all of a sudden, it’s 3 hours later? It made me tired when it jumped from 3:30 San Francisco time to 6:30 Charlotte time when we landed.

Thankfully, we’re home now…kind of unpacked…and watching some Iron Chef to unwind before heading to bed.

Nick and I ended up buying a few things to share for lunch on the plane from SF –> Charlotte.

We split this chicken garden salad – yay for veggies!

And this pasta salad with olives, tomatoes, and feta. These weren’t the best salads I’ve ever had, but they were pretty good. And it was nice to have an option other than a greasy sandwich or fast food.

And then we opened some Cherry Chocolate chip cookies from Frog Hollow Farm.

Yum – they are onto something  :)   These were the perfect sweet ending to lunch, and you can’t beat the ingredient list on the package. I love the mix of cherries + chocolate and they were so crisp and buttery.

Once we landed in Charlotte, we only had about 20 minutes before our next flight starting boarding, so we both just ate an Odwalla bar while waiting in line and had a few pieces of dried fruit on the plane.

Our flight back into Roanoke actually got in early, so we got home a little before 10 pm, which was nice. I’m mostly unpacked, but still have to figure out where to put all this loot I brought back!

I guess I’m having my “second dinner” – pb puffins with almond milk (the only thing we have in the house), on the couch, in my pajamas.

I can’t believe this weekend is over already. Everything happened so fast!

I’m going to try to go through all the pictures tomorrow and hopefully have up a recap of yesterday soon.

 

Can tomorrow be Sunday again instead of Monday?
