Hot Hummus

Happy HIMYM Day!!! 🙂 I’m watching right now – it’s a rerun, but still hilarious.

Work was nutso today! Emails, emails, emails…rescheduling things…processing…nonstop!

I made myself a little snack around 4:15 today. I’m usually digging through the cabinets around 3:30, but my lunch held me over really well.


An apple mess, a la Jess  🙂


I diced one tiny gala apple and popped it in the microwave for 1:30 with some cinnamon. Once that was softened, I topped it with a tablespoon of peanut butter, an little drizzle of pumpkin butter, and some graham cracker crumbs.

Yum! This was also a great choice because I was freezing and couldn’t even think about having yogurt today.

Once Nick got home, we headed over to the chiropractor. Is it sad that I’m upset when I don’t really need adjustments? 😉 I just miss that feeling of having everything put back in place – does that make any sense? Probably not. Either way, it was a good visit!

I was excited for dinner tonight!


I dreamed this up the other night and have been waiting to have it ever since.


When I went to TJ’s this weekend at my parents’ house, I bought a package of their whole wheat Naan bread. I mainly bought it to go along with some of their Indian meals I also bought, but I had the best idea the other night.


Hot Hummus Flatbreads


It was even better than I thought it would be!

For the flatbreads, I just put the Naan on a foil-lined baking sheet and Nick and I each made our own with whatever toppings we wanted.

On mine, I layered:

  • spinach
  • TJ’s Garlic Hummus
  • black olives
  • sprinkle of feta
  • diced red onion
  • diced sundried tomatoes
  • crushed red pepper
  • parsley

After we had the toppings on, I popped them in the oven for about 15 minutes until they were hot and the bread was a little crispy.


This TJ’s hummus is super garlicky – that’s all I can taste! But it’s so good.

We also had some salads with more olives, feta, onion, and tomato.


All that’s left for me to do is pack my lunch for tomorrow, fold one more load of laundry, and maybe paint my nails? I meant to paint them while I was at my parents’ this weekend, but that never happened in between all the eating + shopping  😉

I think the chocolate coffee beans + a few cups of coffee helped! I’m swamped – completely swamped – with work today, but the caffeine did help.

My computer is also being super slow today, which is not helping one bit…I’m hoping it will warm up a bit so I can get things done faster this afternoon.


Lunch today was some good leftovers, in a mug!


I heated up some Chicken Tortilla Soup from last night, topped it with a little guacamole and grabbed some Food Should Taste Good Olive Chips to crumble in + eat on the side.


It actually turned out to be the perfect lunch! It’s another gloomy day here – gray, rainy, and cold.

One thing that cheered me up today?!?

After listening to my morning radio show, I turned it to another station that plays ALL Christmas music 🙂 I’ve had a good couple of hours singing along to Christmas tunes, and it definitely put me in a good mood.

Jolted Awake

Well, it seems I’m back to my normal routine now that I’m home.

I didn’t get up with my alarm. I turned it off, snuggled back in bed with Nick, and finally got up when his alarm went off later this morning. Oops!

I guess I was catching up on all the sleep I needed after this last holiday + weekend.

The only good thing is that my work outfit today is jeans, a tshirt, and my glasses, so I’m not rushing to get ready to leave the house.


And I tried my new Trader Joe’s Trail mix this morning!

It has chocolate covered espresso beans, pecans, almonds, craisins, and golden raisins.


I just made my normal oatmeal base today:

  • 1/2 cup oats
  • 1 cup water
  • pinch salt
  • 1/2 banana, sliced


After the oatmeal was cooked, I stirred in cinnamon and some of the trail mix, saving the chocolate espresso beans for the top. 🙂


Let’s hope these + some coffee will wake me up! I’m going to have a busy day today with work.

Productive Purge

We’re home!

My mom made us breakfast this morning before we left the house, and these sausages were great. I’m not sure of the brand, but she gets them at Sam’s Club – they’re so good for breakfast! I’ve used chicken sausages before, but usually for dinners. This was a fun change.


I had some grits, scrambled eggs, and chicken + apple sausage plus some coffee and water.


After we ate, we had to say goodbye to everyone, pack the car, and get on the road.

Our trip was pretty good – good music and not much traffic.

We stopped about 2 hours into the drive for a bathroom break and to get some lunch.


Nick and I each got a burger with freshly ground beef – mine had lettuce, tomato, onion, ketchup and mustard.

I also had an Amazing Grass bar in the car a few hours later to fill me up until we got home.

Even though we were driving for 6 hours today, I ended up getting a lot done this afternoon once we got home! I love when it happens unplanned like that 😉

As soon as we got home, we unpacked the car and got everything inside. I put away the food stuff from Trader Joe’s, unpacked my suitcase, and put away my new shoes + clothes.

I didn’t realize I still had my sandals upstairs, so I took all my spring/summer shoes out of the closet and took them downstairs to put into a storage container so I could fit my boots in our closet.

But, while I was putting my summer shoes away, I ended up going through 3 containers to clean them out! I put a few purses + shoes in a pile for Goodwill, organized the stuff I was keeping, and threw out a bunch of my WW stuff that I didn’t need anymore.

Sometimes, it just feels great to get stuff out of the house!

Once we were done getting stuff put away, I finished up the grocery list and went to the store for the things we needed for this week. I have my meals planned, so it didn’t take too long to shop and it was crowded at all tonight. It’s usually packed on Sunday nights here, but I’m glad I didn’t have to wait in a long line.

On the menu tonight: Chicken Tortilla Soup!


I bought a rotisserie chicken tonight to use in a few meals this week, and this was so easy!

  • 1 can crushed tomatoes
  • 1 can diced tomatoes
  • 3 cups water
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1.5 cups cooked chicken, diced
  • 1 Tbsp ancho chile powder
  • 1 tsp cumin
  • 1 Tbsp garlic powder
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 1 tsp salt
  • 1 tsp oregano
  • 3 corn tortillas, torn into small pieces
  • 2 Tbsp chopped scallions, plus more for garnish
  1. Heat large pot over medium heat and add 1 Tbsp oil.
  2. Add in tomatoes, beans, and seasonings.
  3. Add in chicken and bring to a boil.
  4. Tear corn tortillas into bite sized pieces and throw in the pot.
  5. Let simmer 5 minutes or until tortillas pieces have softened/thickened the soup.
  6. Stir in scallions.
  7. Serve topped with guacamole, cheese, sour cream, and/or more scallions.


Now it’s time for us to sit back and relax tonight – I’m worn out from this week. It was so much fun, I had a great Thanksgiving, got to see tons of family and friends…but I’m tired!

I have a feeling oatmeal is making an appearance tomorrow  😉

You Butter Believe It

Want to know the most exciting thing I bought at Trader Joe’s the other day?

Butter. I think my heart started beating faster when I saw it.

Nick and I got to try this Kerrygold Pure Irish Butter at the Foodbuzz Festival and fell in love. I don’t really know how to explain how it tastes, but it’s about 100 times better than normal butter.

I can find 2-3 of the Kerrygold cheeses at home, but I haven’t found a place near us that carries their butter.

I bought salted + unsalted to take home, and I convinced my mom to buy one, too 😉


Dinner last night was leftovers and some green beans my mom made.


I had a little turkey, mashed potatoes, sweet potato/apricots, a roll with that butter, and a bunch of green beans.


These green beans were awesome! She just cooked some frozen green beans with some sliced peppers, oregano, garlic, and onion and tossed in some sliced almonds at the end. Yum!

I did have some veggies + hummus during the football game today, but I can’t find the picture! Oh well – my mom made a hummus tray with some carrots, tomatoes, broccoli, celery, and sliced peppers and we ate it all. It was a good “light lunch” to carry us over until dinner and get us some veggies.

The boys + Melissa went to a hockey game last night, and me and my mom went over to visit some family friends last night for a few hours. Too much fun…I don’t think we ever stopped laughing.

Isn’t it crazy when you see people again that you’ve known your entire life and all the kids are grown up now? It’s weird seeing everyone as tall as me and graduating and going into high school.


Oh, and I know I forgot to post the games yesterday! I can’t believe it – my brain has just been fried from all the family, friends, food, and nonstop shopping…so we’ll just consider this week a break – back at it next weekend for championship games!


I’m going to help make breakfast – once we eat and finish packing up, Nick and I are getting on the road to head home. I’m ready to see Roxy, but I’m sad this weekend is over already.

I love the camera!

We actually have 2 Rebels now, so it’ll be great! Nick and I will both be able to take pictures on vacations or when we go hiking or just everyday and not have to worry about sharing or passing the camera back and forth. It was fun playing with it last night.




OH, and I made Nick take a picture of me in my new boots this morning, too 😉


I apparently just woke up – it barely looks like my eyes are open!

We ended up changing our plans for today once we talked to Nick’s family last night.

We got up and left the house this morning at 7:30 to drive to Richmond so we could eat breakfast with Nick’s parents and sister and her husband.


Before we left this morning, I had an apple and Nick and I split this Clif bar.


We also made a pit stop on the way and I got a cup of coffee from Hardees, but it was disgusting! I only had 2 sips and decided I would wait for coffee at the restaurant.


We met for breakfast at Cracker Barrel and sat there for almost 2 hours! I know I’m lucky to have a family that gets along great…and I love it.

I don’t know what I would do if it wasn’t this way. I love being in the middle of this group when everyone is cracking jokes, telling stories, and laughing so hard they have tears in their eyes.


I had coffee + water to drink and a huge pancake breakfast!


I had their normal pancakes, but took the butter off so I could put my eggs on top 😉 Seriously – if you like eggs, you need to try this.

Pancakes + over easy eggs + maple syrup = Perfection


I had some turkey sausage on the side and ate every. single. bite of this plate. This is basically breakfast AND lunch and I was starving by 10:30 when we ate.


After finishing brunch, we headed over to Short Pump and shopped for Nick’s sister for a bit. I don’t know how us girls have so much fun, but we do. We can’t quit pulling stuff off the racks to try on…it feels like we just take over the stores!

After we each spent some money, we headed back to the cars to say goodbye and we got on the road around 1 to head back home  :(  It was such a short trip, but so fun! I’m glad we got to see everyone.

I’m actually in the van right now writing this so  I can hit publish as soon as we get home – there’s a Hokie game on at 3:30!

Mexican + More Shopping

Okay, I’m finally home for good tonight!

We went to one of my family’s favorite little Mexican places for dinner tonight – I was hungry! All that shopping today kicked up my appetite.


I got a bean and mushroom quesadilla with some guacamole salad and some rice. Their rice was actually pretty good, but all I wanted was the bean-y, cheesy mushroom filling in the quesadilla  🙂


And no, these pictures aren’t taken with the Rebel! 😉 It was charging at home, but I’ve already been playing with it and am in love.

My mom, sister, Mammaw, and I all went to Kohls after dinner, too. It’s an addiction! Once I get in the shopping mood, that’s all I want to do.

I did find a few sweaters at Kohls, though, so it was worth the trip.

We got back home a while ago and have been sitting around talking and watching the football games….and having more pie.

Or I did!


Gotta get it while I can.

We have another early morning tomorrow – we’re going to meet Nick’s parents, sister and her husband for a few hours, and I can’t wait to see everyone.

My feet are killing me and I’m ready for pajamas.

Shopped Out

For now 😉

We were gone from 7:30 this morning until 3:30 this afternoon! AND, if that isn’t crazy enough, my older sister actually went with a friend to Williamsburg to the outlets last night at midnight and didn’t get home until 6:30 this morning…and then she went out with us, too!

We didn’t have much Christmas shopping to do today since we’re doing homemade gifts for everyone, so today was just for fun.

I got some great deals, though! 1 pair of boots, 2 pairs of dress/work shoes, and a pair of jeans.

We also went ahead and went to Trader Joe’s today so I stocked up on some stuff I needed and got some fun things, too.

AND – the big news for today – Nick and I bought a new Canon Rebel! We really wanted to get one for our trip in February and there was a really good deal today, so that is our Christmas present to each other.


While we were shopping with the masses this morning, I had a small fat free peppermint mocha – with just one pump of each syrup.


Did you know they normally put 3 pumps of each flavor in the tall/smallest size?!? That makes it so sweet – I always ask for less, and it’s the perfect amount of flavor.

We went in a bunch of stores….tried on tons of clothes…and really barely bought anything that we tried on. In fact, I think the only thing that all of us bought was shoes!

I really want to find some solid color shirts/sweaters, but had no luck today.

My sister actually had to work at 1 today, so we went to get some lunch at Atlanta Bread Company before she got on the road.


It was just like Panera! So strange. Except this salad was much better than the last one I got from Panera – that one was half slimy greens. Ick.

This one was good.


I got the Half’n’Half with a half house salad + half Avocado sandwich.


Whole grain bread with avocado, tomato, lettuce, provolone, red onion, and some dill sauce, I think? It was tasty and there was a lot of avocado  🙂

We’re finally home, relaxing, and (duh) watching more football. I think we’re going out for dinner with my Mammaw and sister once she gets off of work.

Should be good – I’m hungry!

Black Friday Fun!

Well, my mom, my sister and I are about to leave the house for some Black Friday shopping!

It’s one of our traditions to go – we always go to the same mall, and we’re usually done shopping around lunchtime when the crowds start getting really bad.

We never go to places like Walmart where the people are just insane – we just take it easy, walk around and look at whatever want, and barely ever go near a long line  🙂

I was up and ready for some shopping today and just finished eating breakfast.



I was hungry when I woke up today, too, which is a good sign: that means I didn’t eat way too much yesterday!

I cooked up 2 eggs and some oatbran, sprinkled on some salt + crushed red pepper and have an apple for the road.



and there WILL be coffee once we hit the mall 😉

Wish us luck! I’m on the lookout for a few gifts + boots for myself.

Good Gravy

How is it that I ended up making the turkey gravy and my grandmother’s ham gravy today, and I didn’t eat either one?

Also…I had never made turkey gravy before, so I’m not sure they should have let me  🙂 But both of them turned out well!


We had an impressive spread today! And lots of family and friends, which is what I love.


Let’s see if I can remember it all:

  • deep fried turkey + gravy
  • ham + my Mammaw’s ham gravy (yum)
  • mashed potatoes
  • sweet potato/apricot/pecan bake
  • green beans with peppers
  • broccoli salad
  • deviled eggs
  • baked apples
  • stuffing
  • rolls





I had a little of everything, but did keep myself to only one plate! I knew dessert was coming and wanted to save some room 😉


And then.

My mom’s fudge pie.

One reason I love the holidays.


It actually turned out much runnier than normal, which was strange because the outside looked done! It was almost like a lava cake.

After we all ate, we sat around and watched some football and laughed and talked and spent time with family.

Around 6 tonight, we talked to my sister and her husband that are in Spain on Skype – that was nice to get to talk to them today since they missed out on Thanksgiving.

We all ended up having random leftovers tonight, but it was all good.



I heated up a few tiny pieces of ham, 1 roll, and had some salad for dinner.

And more pie  😉

My mom, sister and I are going shopping tomorrow morning, so I’ve got to get in bed soon! We won’t be going out at 5 am, but we always shop on Black Friday – I can’t wait!!!
