Having a puppy is crazy!
Time just slips away and I don’t mind it one bit…except that she keeps me from doing other things like blogging! 🙂
Once Nick got home last night, we took Maggie out to play for a little while – and it would be a lot nicer if it wasn’t freezing here. We’re having 20-30 mph winds and it’s only 30 degrees! Not fun playing-outside weather, for sure.
After playing with her a little while, we fed Maggie and Roxy and headed up to our chiropractor appointment. My back has been doing well lately, actually; I usually need much more work than Nick, but it’s been great the last few trips. Go me!
We got home and I started on a new dinner for us.

Would you believe that last night was my first time to ever have a tuna casserole?
Yup. I’ve never had classic tuna casserole, or any other kind, until last night.
As soon as I saw this Mediterranean Tuna Casserole, I knew I had to try it.
I checked out Betsy’s version and the original and made a few changes of my own – it turned out delicious!
- I used 1 12 oz. can of fat free evaporated milk and about 1/2 cup 1% in the sauce and only 2 Tbsp or so of flour
- To start the sauce, I used 1 can of whole tomatoes that I chopped up, the garlic, 1/2 cup diced roasted red peppers, and 1/4 of a red onion
For my first time to ever make or eat a tuna casserole, I think it was pretty great. I love the flavors in the pasta dish and it was so easy. Plus, it would be great with anything you have on hand: olives, other peppers, etc.
After we ate, I had the best intentions to blog, but between playing and cuddling, the night just got away from me.
Great news: Maggie didn’t whine at all when we put her in her kennel to sleep last night. I’m kind of surprised, actually…I’m not sure that will happen every night yet, but it was a move in the right direction.
I’m staying home again today – it seems that this headache shows up right when I get out of bed for some reason. It’s not as a bad as it was yesterday, but it’s still here.
While Nick watched Maggie, I made us some coffee and oatmeal for breakfast. Nick had brown sugar + pecans + chocolate chips and I made banana + reese oats.
- 1/2 cup oats, 1 cup water, pinch salt
- 1/2 banana, sliced
- cinnamon
- 1 Tbsp peanut buttter
- 1/2 Tbsp dark chocolate chips
And…since I know everyone wants to see her – here’s Maggie at Nick’s feet this morning.
Based on all these pictures, you might think that all she does is sleep.
But oh, she does so much more 🙂
Biting, chewing, dumping her water bowl out all over the kitchen floor this morning…she is the cutest mess ever.
