Fully Loaded

What a perfect Spring day!

Work was crazy, but that’s pretty normal right now. We’ve just been swamped in our office! While I was finishing up work today, I tried a new yogurt.

I won these Chobani Champion yogurts a few weeks ago and finally remembered to bring one to work with me.

Mm…chocolate.

I loved this flavor! The yogurt had a great cocoa flavor, and it went really well with my strawberries.

After another busy day in the office, I was more than ready to go home. I talked to my mom about their visit this weekend and then Nick and I headed to the park with Maggie!

And Maggie definitely enjoyed the time outside.

We walked around the park for about an hour with her, playing fetch and letting her explore.

As soon as she saw the geese in the river, Maggie watched them like a hawk! She would have loved to go in after them, but they were a little too far away for her 😉

She also made friends with one other dog in the park before we came back home.

Dinner tonight was some crazy fully loaded potatoes.

My little sister told me about this place they visited in Ireland (I think?) – the restaurant was just one big baked potato bar!

She said you could just about anything on a potato there: avocado, hummus, beans, veggies, etc.

So, I decided to try the hummus on potato idea, and I’m glad I did. It’s delicious!

I topped my baked potato with:

  • salt
  • pepper
  • olive oil
  • garlic hummus
  • salsa
  • avocado

We had some broccoli and turkey sausage on the side. This dinner was so quick! I’d much rather slow cook the potatoes in the oven, but since I didn’t get started on dinner until 7:15, I just cooked them in the microwave while I pan seared the sausage and cooked the broccoli.

If you haven’t tried hummus on a baked potato, do it soon. I had it on a sweet potato for lunch last week, too. I think I like it better on sweet potatoes, but either way, I’m glad Tiff told me about this.

I should have taken a picture of Nick’s potato 🙂 His had butter, 2 kinds of cheese, sausage, salsa, and sour cream. It was fun making our own combinations for dinner.

 

Oh yeah! I registered for my first running race in almost a year 🙂 It’s just a local (and free!) race and I’ll be running it with a friend/co-worker. Should be fun! I’m pretty sure we get to run on the VT football field! I’m super excited about that.

And my legs are definitely sore after running yesterday. Guess we better get back on a schedule…

Happy Humpday!

Lunch today was easy, thanks to meal prep + leftovers 🙂

I had more of my oat groat salad, the last of the green bean/pepper/onion mixture and celery and hummus.

This is a new smooth and creamy style of Cedar’s Hummus – yum. Reminds me of Sabra, but I got this one because I had a coupon.

I also have a fun snack for this afternoon! I actually can’t wait until my lunch wears off so I can try it.

Being involved in the “healthy living / food blogging” arena pretty much means that the majority of the blogs I read are in the same category. I’ve made such great friends with other bloggers, both from reading their blogs AND from meeting some bloggers in real life, and I wouldn’t give that up for anything.

While I love all the blogs in my google reader, there are a few “non-food” blogs that I’m a little obsessed with, as well.

My favorite non-food blogs right now are:

  1. What I Wore – HAVE to check this every day! And I would like to have her entire closet.
  2. Young House Love – SO obsessed with this lately! Nick and I are looking to do some painting and other jobs around the house, and this blog is great for design ideas and DIY info.
  3. The Superficial – soooo so bad, but so funny.

It’s so fun to see what other people are writing about that aren’t obsessed with food, like I am 😉

Time for another banana split!

I planned this entire breakfast last night 😉 I love when I’m so excited about breakfast that I plan it out before I’ve even finished my dinner.

We have a bunch of bananas that aren’t perfectly ripe yet, but they work great for banana splits. I can’t use super ripe bananas for this because they just fall apart!

And regardless…I knew I had to try this White Chocolate pb with banana and strawberries.

While I prepped my fruit, I cooked some simple oatmeal:

  • 1/2 cup oatmeal, 1 cup water, pinch salt
  • cinnamon

Once the oatmeal was ready, I spooned it into the split banana and added my toppings.

Today, we have:

  • fresh strawberries
  • White Chocolate Wonderful peanut butter
  • a few dark chocolate chips to finish the “sundae”

See why I love breakfast? I have more fun putting together breakfasts than any other meal.

Remember that fantastic meal Nick and I had two weekends ago? (Recap here)

Well, that was just the first stop on their tour!

Make sure to check their calendar to see if it’s coming to a city near you – I know that they still have tickets available for the upcoming events in New York, so if you’re close, go for it! It will be a meal you’ll never forget. I’m actually sad they’re not going anywhere else in Virginia…I would totally travel for another meal like that 😉

Reuniting Run

Well.

Long time, no see.

That’s right. Nick and I went running today for the first time in over 5 months. I guess the good (and bad) thing about having a blog is I can look up exactly when we went last.

The weather was just beautiful today and we wanted to get Maggie outside for a while after work, so we gave it a whirl.

Nick had Maggie on her lead while we ran, and she did okay! We went about 2 miles running and another half mile walking back to the house.

And me? Well…I can definitely tell I haven’t run in 5 months :\ 

BUT – I’m so glad we went. Maggie needed 2 walking breaks during our run and I only needed one ;)  I ended up having a pretty bad side stitch about halfway through, but that’s also pretty normal for me.

Now that the weather is better and we’ll be running more often, I definitely need some better fuel!

I had some veggies + hummus at work this afternoon – good snack, but I think I need something more filling if we’re going to be running after work. My lunch also wasn’t big enough – I was pretty hungry today and didn’t have much else for a snack.

After we got back, stretched, and showered, Nick and I heated up some pasta leftovers for dinner.

Leftover pasta is the best! I think it tasted even better tonight – this recipe was definitely a success!

Planned Lunch

Even though my day has been super busy today, it’s definitely better than yesterday. The weather is better, my coffee has kicked in, and I’m on a roll today!

Plus, packing lunch last night was extremely easy since I finally did a little meal prep and planning this weekend.

Even just a few months ago, I was doing really good with planning ahead and having foods ready during the week.

I guess between weekend trips to see family, the holidays, and our trip overseas, I lost my organizational skills in this area.

We always have food to eat, but I didn’t have extra lunch options ready like I normally do.

So – this weekend, I buckled down during our rainy Sunday afternoon and got back to it!

While we often have dinner leftovers to bring for lunches, I love having something in the fridge just in case. Sandwiches just don’t do it for me (unless they’re freshly made) and having something as simple as a grain salad gives me a jump start on those days when we have no other options.

This weekend, I cooked 1 cup of oat groats in a mix of water and vegetable broth with some red onion, garlic, and carrot. After the grains were cooked, I stirred in some fresh parsley, salt, pepper, and 1 can of chickpeas.

So easy! Since I’m saving the pasta dish we had last night for leftovers tonight, I just grabbed a container of this for lunch today along with the green beans and peppers from last night’s meal.

While this was cooking Sunday afternoon, I also chopped up some carrots and celery so Nick and I could grab them in the mornings to pack with some hummus for lunch or snacks, too. Not having to chop veggies every night is great (mostly because I forget), and now we have fresh veggies for the whole week!

 

Do you meal plan or prep on the weekends? What are your best tips?

I love chopping veggies on the weekend. That can take up so much time each night, and it’s easy to just keep the cutting board out and do everything at once.

Can’t. Stay. Away.

This White Chocolate Peanut Butter is so good!

I couldn’t wait to have it again this morning and I’m already looking forward to having some oats-in-a-jar when this one runs low 😉

This is almost the same breakfast as yesterday, but with diced apple in the mix instead of banana.

And it was my last local apple! I’m sad apple season is gone, but I can’t wait to get some fresh berries and peaches from the market.

Recipe Testing

Yum, dinner turned out great!

Today basically sucked – the weather is crappy, work was nuts, and I was just ready to get cooking and turn off my computer for a while.

For some reason, being in the kitchen just melts away the day. Whatever happened earlier loses its power. The stresses and worries and frustrations slip away with each chop or slice or dice. Stirring a pot of bubbling pasta sauce just makes me forget about everything else and focus on dinner.

Thankfully, the new recipe I wanted to try tonight turned out so good!

While I’m not going to give out the full recipe yet, I’ll tell you the major ingredients here:

  • whole wheat pasta
  • ground buffalo
  • crushed and diced tomatoes
  • tomato paste
  • garlic
  • oregano
  • crushed red pepper
  • mozzarella
  • …and a secret ingredient 😉

I love when recipe trials turn out good! It makes me happy and it means we have edible meals.

While the pasta dish was cooling, I cooked some frozen peppers and onions and added in some green beans, salt, pepper, and garlic for a quick side dish.

Any good dinner is nice on a Monday night, but I’m always extra excited when it’s easy to put together, too.
