Oatmeal to the Rescue

Roxy cuddled me all night last night  🙂  We were taking care of each other, I guess! She slept about half way up the bed right beside me so I had to curl my legs around her – it was pretty cute. She is not a fan of the eye drops, but she has to have them. I slept well, and my back/shoulders/neck are starting to feel better, but I woke up this morning with a killer headache again. I’m going to have some Nick-made coffee (yay!) and take one of my pills with breakfast so I can stop this thing in its tracks – I hope it doesn’t come back today since I’ll actually be at work all day today.

I really wanted a big bowl of oatmeal this morning, so that is what I made


  • 1/2 cup oats, 1 cup water, pinch salt
  • 1 small apple, chopped and microwaved in bowl with some cinnamon BEFORE adding the oats
  • more cinnamon!
  • 3 Tbsp TJ’s Omega Trek Mix
  • 1 tsp real maple syrup


I love cooked apple in oatmeal – who knew? I’d never tried it until a few months ago, but it’s so easy and so good. This will definitely be on rotation in the fall.

Nick is making coffee as I type, so I should have an amazing cup o’ joe to take with me to work this morning.


Did you watch American Idol last night?

We kind of watched this season, but missed a lot, so I was okay with either one of them winning BUT did you see the entire awkward thing with “bikini girl” and the judge, Kara? That was strange.

Welcome Back, Spring

The breeze today was kind of chilly, but it was a beautiful day. I’m so happy spring is *officially* back. I’m ready to break out the sandals and skirts already and start hiking more.  Just for kicks – here’s a shot of what we pass every day on the way to and from work


I’m so glad you enjoyed the baby bear pics  🙂  I would have loved to bring one home with me, but I don’t think we would enjoy it in another couple of weeks. They sure are cute though.


When I got home from work, I had no clue what I wanted for dinner and Nick didn’t either. I had a couple of things I could make, but nothing really sounded good, so we just sat around for a while watching the news until I decided. I pulled out my one-pot wonder from a few weeks ago and defrosted it. Add some steamed broccoli and drizzle it all with some olive oil, and it was a good quick dinner.



While we were thinking about dinner, we saw Rachael Ray making some baked stuffed apples and Nick suggested we make our version of it tonight. I had some stuff we needed to go pick up from the store anyways, so we went to run some errands and then came back to make dessert.

And what a dessert it was! These turned out great – Nick’s idea worked perfectly.

Nick and Brandi’s Skillet Apples – Makes 4 servings

  • 3-5 apples, sliced
  • 1 Tbsp canola oil
  • 2 Tbsp walnuts, chopped
  • 2 Tbsp pecans, chopped
  • 2 Tbsp craisins
  • 3 Tbsp brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp fresh orange zest
  1. Slice apples.
  2. Heat oil in pan on medium heat.
  3. Add apples and let cook about 10 minutes, stirring every few minutes.
  4. Once the apples have softened, add in the brown sugar, nuts, and spices.
  5. Cook until sugar melts and coats the apples.
  6. Stir in the craisins and orange zest.
  7. Serve – with or without ice cream 🙂



There’s a good amount of leftover apples….and I’m thinking they need to end up in some breakfast this weekend, but we’ll see!

I’m going to lay down on the couch in my pjs and watch a little Food Network 🙂

Friday for Me!

I won’t be at work tomorrow because of my secret appointment that I have not mentioned yet, so today is my Friday. Well, almost like Friday but without the jeans.

Do you ever just wake up and feel hollow because you’re so hungry? I just felt like I had nothing in me at all, and my tummy was yelling at me to feed it! Of course, I listened.

I had another bowl of Berry Bananaza


  • 1/2 cup oats
  • 1 cup water
  • pinch salt
  • 1/2 banana, sliced
  • 4 strawberries, sliced
  • palmful of blueberries and raspberries
  • cinnamon
  • 1 Tbsp sliced almonds


And instead of just a cup of skim milk, I had a monster glass of chocolate milk  🙂


Sometimes you just need chocolate milk, and today was one of those days. And YES, I like my chocolate milk very chocolat-y.

I had a cup of coffee at work – I usually have this every day, but I usually use the same mug so I don’t take a picture of it every day.



Lunch today is….leftovers!  Surprised?  No?  🙂

Do you like leftovers?

Obviously I do!  I mainly just don’t want to waste food, but I don’t want to make a meal every single night, either. Plus, I think leftovers make some of the best lunches and I can freeze them for later when we’re running low on everything else.

Buzzin’ for Food

Did you notice anything new?

No…not a new haircut.

Not a new shirt, sadly.

I’m now a Featured Publisher for FoodBuzz!!!  I am so excited about this – I love FoodBuzz! I love that you can find tons of stuff on their site just about food and other foodies and restaurants…it’s like my dream come true.


Breakfast today was good, as usual.

I try to make my eggs look good in the pictures….it’s hard since the eggs are white, on top of white grits, in a white bowl….


At least they taste good  🙂

I’m so glad today is humpday already! I only work one more day this week, so today is actually my Thursday! I have something kind of exciting on Friday (which I won’t explain yet) but I’m super excited and nervous and ready for it be here already!

There may also be a special blogger something happening on Friday that I am even MORE excited about!!! But you’ll have to wait to find out  🙂

Lunch today is the last of my black bean burgers with some steamed broccoli  and the last of my corn soup. Sad to see it go, but it sure does hold me over well!



Plus an apple to round out my meal.
