My New Favorite Bowl

I’ve got a new favorite dish in the house!


Roasted acorn squash is the perfect vessel for chili.


Which, thanks to a recipe challenge I’m participating in, is my best chili to date.

The recipe will be posted this week, so keep an eye out for it. I’ll never go back to my old recipes – seriously delicious.


And even more so served in a squash bowl and topped with some avocado.


Back to work + cooking! I’ve got a wheatberry salad in the works, a butternut recipe just out of the oven, and a plan for cookies that I hope will work out if I have the time.

I’m so happy it’s Friday!!! It doesn’t feel like it to me, but I am wearing jeans and I had a fun breakfast + awesome Honduran coffee so that’s a good way to start the day.

It seems I decided to have veggies for breakfast and fruit with lunch, which is the opposite of what I normally do.

But it was good!


Maybe I’m missing all those beans we had in Honduras?


I made a stacked bowl for breakfast this morning and it was super tasty.

  • grits
  • bean/corn/pepper/onion salad mixed with some of our fresh cooked tomatoes = instant salsa
  • 2 eggs that I cooked too long  😦
  • fresh Miami avocado!

The only bad thing? I totally overcooked my eggs and they weren’t runny at all! It was still a good combination, though.

Plus awesome coffee that I took with me to work


Lunch had to be easy and quick today. I had a follow-up eye appointment, so I ate this lunch in stages.


This morning, I put together a strawberry + almond butter sandwich on some alvarado st. bakery bread.


Some all natural pear crisps – they’re like air! So light and good.


and some broccoli I had at work from earlier this week.


I have a feeling some snacks will be happening this afternoon…my stomach is not satisfied.

Hooked on Home

Okay, this could potentially be a bad thing, but I think I’m officially in love with telecommuting! Good because I think it’s great that we had to chance to try it out, but bad because I’m really not sure how much my office will support it and changing schedules/days in and out of the office. I guess we’ll see after they see how today went!

The only bad thing is that my internet has been a bit slow today, but I’ve been very productive! I’m getting all my work done, and while waiting for something to load, I threw the sheets in the washer. I like being able to do those things if I’m just waiting for something to load or save on my computer instead of just sitting there waiting.

I’m crossing my fingers that my office will really consider letting us telework if we can all work out a schedule so someone is actually in the office at all times – I think it would be great to be able to work from home 1-2 days a week if possible.

The other thing I love?

Being able to decide NOW what I want for lunch instead of packing it up and hoping that I still want that when lunchtime rolls around  🙂

I’ve been feeling these babies up since we got back…just waiting for one to be ripe.


Yes, those are 4 huge avocados. Gabby, who went on the trip with us, had her mom bring us some of their avocados from their grove in Miami when we stopped there for a layover! They have 10 acres of JUST avocados – drool.

I was so, so excited to get these and one of them was finally ripe today.


Seriously, almost the size of my face. I love it.

Since we have tons of beer butt chicken left, I decided to make a big salad for lunch.


  • 1 head of romaine
  • scallions
  • cilantro
  • yellow tomato from the garden
  • beer butt chicken
  • miami fresh avocado  🙂
  • peach salsa for the dressing

This avocado was so different than the ones I get here – it tasted very fruity, almost floral like? I’m not sure how to describe it, but it was perfection. I can’t wait to use up all of these in the next 2 weeks.


The sweet & spicy peach salsa was the best combination with the avocado, scallions, and cilantro.

I just got this bowl of rainier cherries out to round out my lunch.


Nick actually came home early since he’s mostly just working on his dissertation today, so he’s taking a lunchtime nap and hoping that he starts feeling better. I think I’ll lay down with him for the last 10 minutes of my lunch break.

Honestly….I think I have a problem  🙂 I already don’t want to go into the office tomorrow!

Cloudy + Cold

Those pancakes were awesome this morning!  They definitely did a good job of keeping me full until lunch time.

I liked my lunch, but I was kind of sad I didn’t have a hot one today. It’s so dreary and cold and rainy, and a cold salad (no matter how good) is not a good pick. Oh well – it still tasted good!


I had a big salad with:

  • Romaine
  • White beans
  • Avocado (yup, that makes a whole avocado today and it’s only lunch!)
  • Tomato
  • Cilantro
  • Scallions


In all it’s glory in my big bertha gladware container –


Plus some fruit salad I cut up this morning


Cantaloupe, farmer’s market peach, blackberries and the last of the raspberries.

I think peach  + raspberries is one of the best combinations – sweet and tart at the same time.

Work is going – at least it’s Friday and I’m in jeans!

Ah! I’m having major computer issues this morning – here’s hoping it actually posts correctly! My laptop won’t load my profile/screen with all my folders, etc? Anyone know how to fix that?


Alright, I’ve been working on overdrive on what to do for my last set of pancakes for this challenge. I’ve been making lists, crossing stuff off, changing my mind…

This is basically what I’ve been thinking for the past 2 days:

Another sweet one?

But what else would I do?

I did Strawberry + Nutella.

I did S’mores.

I did Cinnamon Roll.

I did PB & J.

No, not another sweet one.

But what then?


It has to be savory! I know I love a good Bob’s Breakfast, so what else could I do to jazz them up?

You probably know my obsession with eggs anyways, so what was I waiting for?


I think I’ll call these Fiesta Siesta Pancakes.


The basic pancake recipe was the same I’ve been using but without the cinnamon:

  • 1/2 cup oats
  • 1/3 cup egg whites (all I had left) plus a splash of milk
  • pinch salt
  • 1/2 tsp baking powder

In between the pancakes are 2 slices of turkey bacon, sliced avocado, and some peach salsa Nick’s sister brought with them a few weekends ago.


Top with an over easy egg and slice of avocado, plus a little crushed red pepper + salt?

I can’t believe I’m saying this, but I may like these just as much (or more!) than all my sweet creations!


I cannot help but love runny eggs. I don’t know what it is about them, but that + pancakes + avocado + sweet and spicy salsa all in one dish is perfection.

Why the “siesta” in the name? Because now I need a nap  🙂

Do you talk to yourself (or others) about how good something while you’re eating it? I could not stop talking while eating my pancakes this morning. Every bite was “this is so good!”. Of course, that was inbetween the “what’s wrong with my computer?!?”  🙂

now! Well, not exactly right now, but soon enough! My parents are already on the road and I can’t wait to see everyone!

My lunch hour was pretty busy since I had to get my hair cut and run a few errands with Nick before we left town. I wasn’t super hungry at lunch time, so I waited until I got back from our lunch break to get my lunch out.

I definitely waited too long! I was so hungry by the time I got to eat.


I had some of the leftover guacamole salad + a few extra roma tomatoes cut up and a small piece of leftover steak.


It was good and spicy, but not very much food. I was still hungry, so I went ahead and dug into my afternoon snack –


1 plain oikos, some TJs fruit and nut medley cereal, and fresh raspberries. Again, good, but I’m still hungry!


I’m hoping we’ll need to stop somewhere on the way so I can get a latte or smoothie or something else filling to hold me until we get there.

I’m not sure what dinner is going to be once we get to Nick’s parents house, but I’m sure it will be great.

Here we go again – another super fun weekend road trip  🙂

I’m hoping to at LEAST do these this weekend:

  • lots of talking and laughing
  • Amish market for necessities + things I just want and have no room for
  • Costco to look for a few things
  • birthday shopping with the girls? We’ll miss you Maleasa, Melissa, and Tiff!  🙂
  • who knows what else!

I think that’s right, right? Pretty + Delicious!

I’m so glad you guys enjoyed the french-ed donuts – we sure did  🙂  They were so good. Good thing I don’t have donuts hanging around the house all the time!

I’m so happy today is over – I had a bunch of stuff to do today, but it just seemed to go by so slowly. I’m hoping the rest of the week is a little faster because I have a fun weekend coming up.

Lunch today was great, thanks to some leftovers.

I had a piece of the chicken + some of the saffron/zucchini/ww couscous mixture from the other night


Plus some broccoli


Nick and I went over to TJ Maxx and I found the most beautiful dress!  I took too long looking through the clothes and I didn’t have time to try it on – I have to go back! I’m trying not to get my hopes up in case it doesn’t fit, but I loved it. I also found a really cute pair of sandals but we just had to get back to work. I’m hoping both the dress + sandals are still there whenever I get back!

I brought fruit to go along with my lunch, but by the time we got back, I had to get working on some other things and I just never ate it. I put it in the fridge for tomorrow’s lunch – one less thing for me to pack  🙂

I did end up eating the actual snack I brought with me:


I had one of my homemade bran muffins on some plain oikos. I’m going to be really sad when this yogurt isn’t BIGI free anymore.

Nick had plans to go out on the river by himself in the kayak tonight since I had a chiropractor appointment – it worked out perfectly. My appointment went really well – it seems like my back/neck are doing really well after the accident, and I think everything is just about back to normal.

I came home and started prepping dinner, then just waited until Nick got back to finish it.


I made Barefoot Contessa’s Guacamole Salad, except I used 1/2 a yellow pepper and 1/2 an orange. I used regular tomatoes since we didn’t have grape tomatoes. I also only added about 2 tsp or so of olive oil – you really don’t need 1/4 cup on this salad. I actually think it would just be too oily with that amount.

I love this salad – it has just the perfect amount of spicyness, and I love how colorful it is.


I put mine over a bowl of romaine – no dressing needed on this salad! All the flavor is in the guac salad.

The main part of dinner came out of a recipe in Eating Well for Huevos Rancheros. I forgot to  buy salsa verde, so I just kind of did what I wanted.


For some reason, I just cannot have runny eggs without grits or oatbran! I just want to make sure I have one of those to soak up all that eggy goodness  🙂

I mixed up a can of pinto beans with fresh cilantro, scallion, cumin, ground coriander, and garlic powder, mashed them up a bit and put them on top of my grits.

Then I added my eggs, some red pepper flakes, ancho chile powder, and more fresh cilantro.

Ay caramba, this was bueno! Nick and I both loved it. I made his on actual corn tortillas – 2 on a baking sheet with the beans + some cheese on top until the cheese melted, then his eggs on those. Same toppings as me!

I love easy meals, and this one had so many flavors and colors. I love having healthy meals that are delicious and beautiful to eat. It makes me feel good that I’m taking care of myself and eating a balanced meal.

Well, I’m off to maybe paint my toenails? and get ready for Diners, Drive-ins, and Dives – if I can make it that long!

One Sick Kitty

Poor baby.


Nick took her to see one of our friends/mentors and he thinks that she might have glaucoma in her right eye, so we have an appointment at the vet today at 2. It is turning into “pet appreciation day” instead – I missed going to all the stuff at work, but that’s okay. I brought Roxy home and am sitting here with her, eating lunch, until I have to drive her back into town for the appointment. She has not had a good day and she gets car sick, so we’ll have to cuddle her a lot tonight to make up for everything today.

We’re just a mess today! Between her cloudy eye and getting sick in the car on the way home, and my killer headache, I don’t know who’s taking care of who in this house  🙂 

One thing I liked about having to come home is that I was able to make whatever I wanted for lunch. I don’t mind packing lunches for work, but I hate when I pack something and then I don’t want it at all once lunch time actually rolls around. It took me a long time to decide what I wanted today, but it was a good one.


I made a cheese/tomato/avocado sandwich on an arnold thin that I grilled in a pan to warm the bread.

Plus a huge salad that I loved. I want this everyday!


  • 2-3 cups spinach
  • 1 cup broccoli slaw
  • 1/4 avocado
  • 1/2 kiwi
  • handful fresh pineapple
  • handful raspberries
  • 1 radish, sliced
  • 1/2 Tbsp flaxmeal
  • dressing made with 1 tsp olive oil, 1 tsp rapsberry vinegar, 1/2 tsp dijon mustard



This made the salad:


So good – I wish I could eat at home everyday!

I’m going to walk down and get our mail, then load Roxy back in the car for the appointment. I hope nothing really bad is wrong!

Case of the Mondays

Today has not been my day.

I should have known when I turned my alarm OFF instead of hitting snooze  🙂



Breakfast was good, at least!




This bowl was:

  • 1/2 cup dry oats
  • 1 cup water
  • pinch salt
  • heaping tsp. of cinnamon
  • 2 Tbsp total of walnuts/almonds
  • 1 cup pineapple chunks
  • 1 Tbsp unsweetened coconut


This was a really good mix (again), but I forgot the little bit of brown sugar I used on this mix last week!  It was still good without it, though.



Work was just insane today – I am  so glad today is over.  Do you ever have those days when you just wish you could walk out and not come back?  That’s about how my morning went today. I guess everyone has these days every now and then, but it doesn’t make them any easier.


Lunch was pretty good, but probably not exciting picture-wise  🙂


I had some bulgur topped with frozen->thawed meatballs and sauce from last week. Still good after being frozen!





Plus some peas, green beans, and yellow wax beans on the side.





I packed clementines, but work was so busy and weird that my appetite wasn’t what it normally is.



Dinner used up some leftovers in a different way. It was good and just what I needed.


Cumin Chicken Taco Salad





  • 1/2 cup fat free refried beans
  • 1/4 cup brown rice/salsa mixture
  • 1 piece of the cumin/oregano chicken from the other night, diced
  • 1 roma tomato, chopped
  • 1.5 cups romaine
  • diced avocado
  • drizzle of 2 tsp. olive oil and some lime juice



This is one of my favorite ways to get in a LOT of veggies  🙂


I also heated up some of my BSI entry, the Barley Date Pudding. It hit the spot. Creamy and comforting.





I’m off to have a glass of milk – I can tell I haven’t had enough calories today since I’m kinda hungry again.


I don’t like when work gets in the way of my eating  🙂

Today was a good day!  It was pretty chilly here all day (which helped to inspire my BSI entry), but the sun was shining and the sky was blue.


After lunch, I ran up to the grocery store to pick up a few more things I couldn’t get earlier, then came home to fold some laundry. We bummed around on the couch for a while before I started on dinner.


I thawed some chicken breast and decided we needed a little Mexican flavor for dinner   🙂


Cumin and Oregano Chicken Breast topped with Avocado (mixed with scallions, cilantro, cayenne, salt, and lime juice)





On the side, we had some brown rice mixed with salsa, cumin, and garlic powder and the leftover green beans from the other night.   ¡Olé!  Right Mara?  🙂




Now…for my first ever Blogger Secret Ingredient entry, I decided to make  the perfect dessert on this chilly winter day.


Barley Date Pudding!  A new spin on a classic rice pudding.

  • 1 cup dry quick cooking barley
  • 12 oz. can fat free evaporated milk
  • 4 oz. skim milk
  • cinnamon (to taste)
  • pinch nutmeg
  • 6 dates, chopped
  • pinch salt (about 1/4 tsp.)
  • orange zest (to taste)
  • 1 tsp. honey
  • 1/4 tsp. vanilla extract


This makes at least 4 servings, maybe 6-8 depending on your serving size.


1. Put barley, evaporated and skim milk, cinnamon, nutmeg, and dates in pot on stove. Heat to a low simmer, then turn heat down to low. You want it to stay hot, but you don’t want to scorch or curdle the milk.






2. Let it cook until the barley is tender and most of the milk has been absorbed. (I ended up adding about 1/4 cup of water near the end, too).


3. Take off stove, put into large mixing bowl and stir in fresh orange zest, vanilla extract, and 1 tsp. honey.





4. Drizzle a tiny bit more honey on top of each serving. Enjoy!  We tried ours warm right off the stove and it was awesome. I will probably try it cold tomorrow  🙂
