Rushin’ Around

Ah!!! Today has been just going and going, non stop.

I got everything done at work, finished all the lists I was working on, AND thankfully remembered to call and have a new EpiPen sent to my pharmacy. My other one was expired, and I will definitely need that if I get stung by a bee.

I packed a snack for this afternoon and never even took it out of the fridge. I was hungry alright…I was just so busy this afternoon that I didn’t stop for a minute to actually get it out. Oh well – at least I got everything done!

Dinner was super quick and easy, thanks to the leftovers from last night.

I had a serving of the leftover pasta along with some extra broccoli and a Mr. Stripey tomato from our garden!

I love having fresh tomatoes – I hope we don’t miss too many while we’re gone!

Extra cilantro is always a good thing.

I’ve had a lot of broccoli and tomatoes today! Good thing I like them, I guess.

We ran more errands after work to get me some leather gloves and a cheap/smaller wallet for the trip. I think that’s it – for now  🙂 If we have to buy anything more, we won’t have any more room!

I’ve been working on laying out my clothes and all our supplies so we can pack everything up in the morning and get on our way. And now I’m ready for pajamas and a little popcorn snack.

Okay, well now I am just getting excited for our trip. It seems like the weekend was pretty calm in Honduras, which makes me feel a bit better. I know that going into a place that’s already in a bit of unrest is risky and scary, but it’ll be worth it.

I’ve got so much stuff running through my head today…I have about 10 different lists going right now:

  • things to pack
  • things to still buy
  • all the random things I need to get done today at work and at home
  • a possible grocery list for the week we get back so I won’t have to think too hard to come up with meals
  • etc…

Thanks to our unplanned lunch out yesterday, we both had leftover pizza for lunch!

We ended up running a few errands at lunch today, trying to get the last things done before heading out of town tomorrow. Just a few more this afternoon and I think we’re ready! Or I hope so.

It’s back to work for me – I have a full afternoon of finishing things before going home.

I guess it has been a little too long since the last time I did yoga – my arms and back are sore from so many down dogs and planks! But it’s a good sore.

Are you super excited that I’m not having the barley dish today? I loved it, but I was ready for something new today. I had to root around in the freezer last night, hoping I had marked the bags correctly and look what I found!

Seriously – who eats broccoli and tomato with pizza? I do. Everything was good, too.

One of my coworkers brought these in this morning, so I had to snag a few for me and Nick to have as our “lunch dessert”. The strawberries are from his garden and another coworker covered them in chocolate and then brought them to us! Very sweet, but I hope she kept some for herself – I probably would have covered them in chocolate but left them at my house for our enjoyment only.

What can beat regular chocolate covered strawberries? Farm-fresh chocolate covered strawberries. These put all the ones I’ve bought this year so far to shame. They were perfectly ripe and juicy.

I think this afternoon is supposed to be pretty rainy and nasty, so I’m not sure if we’ll end up running or not. If not, I’m hoping to do some yoga after work in the comforts(?) of my own home. One reason I’m not a fan of doing yoga at home is our house it not very big, and the ceilings are pretty low in most of the rooms so I can’t fully extend my arms up – I guess people were a lot shorter in the 40s when this house was built. The one room that does have higher ceilings is right beside our bedroom so I couldn’t do yoga in the morning (which is my eventual goal) without waking Nick up – I’ll have to get creative.

Maybe I need to ask for a portable DVD player for my birthday this month….hm. Then I could yoga outside on the porch, in the dining room which has higher ceilings….the wheels are a-turnin’.

Thank you for all your tips!

The sad thing? My alarm clock is already in a place where I have to get up to hit snooze/turn it off! I guess I’ve gotten used to getting out of bed to hit snooze and jumping back in. We’ll see what else works, though – I got some  great ideas from your tips and suggestions!

I don’t know why I’m so cold today, but I have been freezing all morning in my office. I was starting to get hungry around 10:30 so I got out my green smoothie for today and drank it as fast as I could. I really didn’t want a cold drink, but I wanted my smoothie so I tried to get it over with as fast as possible!

The normal mix, lately:
•    1 cup almond breeze
•    ½ banana
•    2-3 cups spinach
•    ½ Tbsp flaxmeal

It was good, and it got me through until lunch.

All I can say is I’m glad I have a lunch that I can heat up – I’ve sitting here in my favorite granny sweater trying to keep warm while eating – at least I’m thawing out a bit.

Lunch may look a little familiar, but a little prettier – at least I tried to make it look a little different.

I have a substantial snack packed for this afternoon because I’m going to a yoga class at 6 tonight! I am so excited to be going – I don’t know how often I’ll be able to go since it’s about 40 minutes from my house, but I am psyched for tonight.

Dazed and Confused

My days are so mixed up this week! I keep forgetting that it’s Thursday – it feels like a Tuesday or Wednesday to me, so I keep getting lost on the day / date / what’s on my calendar for today. I am happy tomorrow is Friday though! I’m ready for a weekend.

This morning went by pretty fast since I had some stuff to catch up on at work after being out a lot this week. Nothing too crazy or pressing, thank goodness. It was actually pretty calm at work, so I was plugging away at emails and submissions.

Lunch couldn’t come fast enough! I was so hungry when Nick got over here to eat, so I was happy to dig in. My lunch was a random mix of things, but it turned out pretty good.

Plus a cup of tomato soup – strange combo of food, but it worked and filled my hungry belly.

Nick and I ran a few errands at lunch, mostly to make sure I have everything I need for my baking projects tonight! I’m trying another cookie recipe for the contest I’m going to enter – I think we may have it figured out, but we’ll see once they come out of the oven later tonight.

The weather is absolutely beautiful here today, so I think we’re going to go for a run after work and see how I feel. I don’t really feel sore anymore – it’s mainly the headaches that are still bothering me. But if I’m feeling good when we get home, we’re headed outside to try – it is way too nice to sit indoors.

Clear but Fuzzy

Well, except for what I already knew about the soft tissue damage in my neck/shoulders and some swelling on my knee and collarbone, I’m all in the clear health-wise. Thank goodness!

The worst thing? i’m having horrible headaches, and my doc told me today that I may have them for the rest of the week off and on because, with impact like that, it can actually bruise the brain a little which means killer headaches. Good thing I have those pain killers – they do wonders on these headaches, but they do make me a little fuzzy. Hopefully I won’t have any big projects at work this week!

I started the second book in that coffeehouse series this morning and love it already – I’m going to have to buy the rest of the series pretty soon.

All in all, the appoinment went well. He checked me over and nothing seemed strange or out of place and he was happy that I’d already had x-rays done on my knee and neck and that nothing was wrong there. He said I should be feeling back to normal by next week, except for maybe a headache or  two so I’m happy with that.

Lunch today was easy to make and easy to pack.

My body isn’t too sore or stiff today, but staring at a computer is not helping my headache. I took a pain pill with lunch, hoping that this headache will go away soon – if not, I hope this afternoon flies by  🙂

I’m such a mess!

 

I do NOT have pictures of this, but I will tell you the story  🙂

 

One of my coworkers bought a box of mixed candies from The Chocolate Spike, and invited us all to our little conference room to share them with him – score!  So, we cut most of them into pieces so we could all try the different flavors, and I guess a little piece of chocolate fell onto my pants. No biggie, right? Too bad I didn’t notice until I stood up to leave the room. It fell right where my legs were crossed (another reason not to cross my legs, Caitlin?), and kind of melted into my khakis.  I can’t believe it – it’s a good thing my office is pretty small and we joke around together all the time – it was pretty funny!

 

Oh – and I got to try the Mango Lime truffle Sarah!!! You’re going to love it – great choice.

 

Since I participated in the amazing chocolate fest this afternoon, I didn’t eat my planned snack.

 

Nick and I went to BodyPump tonight and it was packed!  We were hoping there would be less of a crowd tonight because there was a Tech basketball game, but I think it was even more crowded than last time. It was a good class though, and a good workout.

 

Dinner was leftovers of my one-pot wonder, plus some steamed broccoli.

Buzzin’ for Food

Did you notice anything new?

No…not a new haircut.

I’m now a Featured Publisher for FoodBuzz!!!  I am so excited about this – I love FoodBuzz! I love that you can find tons of stuff on their site just about food and other foodies and restaurants…it’s like my dream come true.

I try to make my eggs look good in the pictures….it’s hard since the eggs are white, on top of white grits, in a white bowl….

I’m so glad today is humpday already! I only work one more day this week, so today is actually my Thursday! I have something kind of exciting on Friday (which I won’t explain yet) but I’m super excited and nervous and ready for it be here already!

There may also be a special blogger something happening on Friday that I am even MORE excited about!!! But you’ll have to wait to find out  🙂

Lunch today is the last of my black bean burgers with some steamed broccoli  and the last of my corn soup. Sad to see it go, but it sure does hold me over well!

MORE Colors?

I am on a roll today!

 

I have definitely “eaten a rainbow” today and am proud of it!  I try to eat pretty healthy most days, but there aren’t many days when my meals are so colorful  🙂

 

Dinner was leftovers from Sunday night ,with a different veggie on the side.

And the winner is….

This afternoon, I had a snack at work before we went running.

 

0% Fage, some pom seeds, and 1/3 cup TJ’s high fiber cereal that has the dried fruits/nuts in it (I forgot the name)

Good mix of protein, fiber, and antioxidants!

 

Our run today was good, but a little shorter than normal because we ran a new route near campus. It was nice to be outside, though!  I’m excited for spring!!!

 

Dinner was good and was definitely a complete and balanced meal.

I based this meal off a recipe from the August/September 2008 issue of Taste of Home’s Healthy Cooking. This looks like a magazine, but it’s basically a small cookbook! It has tons of recipes! I need to look for more of these.

 

My name for it? “I Got What You Need One-Pot Wonder”

My version included:

  • 1/2 onion, diced
  • 1/2 red pepper, diced
  • 3 carrots, diced
  • 3 cups broth
  • 1 cup quick cooking barley
  • 1 cup bulgur
  • 1 can corn, drained
  • 1 can pinto beans, drained and rinsed
  • 1 cup leftover steamed peas
  • 1 lb. lean ham, cubed
  • parsley
  • salt
  • pepper
  • garlic powder
  • hot sauce

 

  1. Cook onion, pepper, and carrots until softened (can use some oil, butter, whatever you have/want)
  2. Add in broth and bring to a boil.
  3. Stir in barley and bulgur, reduce to a simmer.
  4. Let cook until grains are done/most of the broth is absorbed.
  5. Stir in corn, beans, peas, ham, and seasonings.
  6. Serve!

 

This made a TON – which is good, because we’ll need it this week for leftovers/lunches  🙂

 

So colorful, right?    We had some steamed broccoli on the side.  Did we need MORE veggies with dinner? Who knows…I just wanted some broccoli! I also drizzled a little olive oil over my meal.

 

 

 

Okay….so the moment you’ve all been waiting for.

 

First – thank you SO much to everyone who participated!  I am so happy with how my first 2 experiences with the BSI have been – it is so fun to see what people can come up with!

 

I recruited my husband in picking the winner tonight, so we went through and looked at ALL the submissions, looked at the pictures, read through the ingredients and instructions, etc.

 

How was I supposed to choose when I have entries with polenta croutons, crabcake quiche, and steak spinach rolls

 

We finally got it narrowed down to a few….but one recipe just stuck out to both of us. I checked and re-checked the ingredients to see that I could actually find everything here – and I could. 

 

My criteria for this week’s contest was that the recipe be:

  1. Creative, and
  2. Accessible

 

I will say, I’m glad I didn’t put “ease of recipe”, because I couldn’t have picked this recipe as the winner if I had.

At first, I wasn’t sure I could find all the ingredients, but I think it’s because the recipe was just a bit more complicated than some of the others that I kind of glossed over the ingredients the first time I read it.

 

If you have NOT looked at her recipe, do so now!!! The mix of spinach, oranges, balsamic, and goat cheese sounds and LOOKS amazing  🙂 It is something I would have never thought of putting together and something I’ve never really seen before in any other recipes, which is what put it over the edge.

 

Thanks again for everyone who participated – Nick and I wanted to try every single recipe after looking at them, and that’s after we had just eaten dinner!!!
