Better Burger

Surprise, surprise – I didn’t have any coffee today! I didn’t feel like grinding the beans and everything this morning and I didn’t leave early enough to get some in town, so I just had some green tea once I got to church. I always forget how much I like tea. I mean, I love good coffee but I really love tea, too. I need to start drinking it more, since I have tons at the house and at work!

I had to run a few errands after church, so I headed out to Kroger and the bookstore to pick up a few presents and the last couple of groceries I needed.

Lunch today was easy! What else but leftovers?  🙂



Nick and I each heated up one of the leftover burgers and I had the last serving of the caprese salad with some extra tomato from our garden thrown in. Why is this combo so good?


I had some lettuce from the market and sliced tomato from our garden on my burger. I think buffalo / bison is now my favorite burger. It’s so lean, but has so much flavor! Plus the ground bison I can buy at Kroger is from Virginia! Score.

Since we had a fun day out on the river yesterday, I’ve got a hamper full of laundry calling….plus a nap at some point  🙂

Paddle, Jump, Swim, Eat

Wow, what a day  🙂

I got back from getting groceries and everything about 1/2 an hour before our friends, Ross and Jen, arrived, so I put all the food away and heated up a quick lunch.


I heated up the last serving of the enchilada pasta, added the last of my sliced zucchini and a dollop of guacamole. This was a spicy bowl!


The raw zucchini was really good with this because it cooled down the guac + pasta a little bit.

As soon as I was done eating, I changed clothes and helped get snacks and stuff together for the river trip today. Nick had cleaned the house up for me while I was gone getting groceries and running errands – what a guy, huh?  🙂 I am very thankful for him for that because I knew we were going to be eating at our house once we were done on the river.

We got on the river around 2:30 or so and started the 7 mile trip.

We had a small chance of rain and it was drizzling just a little right when we were about to put in, but it stopped! The weather was actually perfect today – warm, but overcast so it never got too hot and it never rained, either.

We paddled for a while and then stopped to swim for a bit. Then Nick and Ross saw a rope swing on the other side of the river, so we hopped back in and went over to that side to play on that for a while.

Fact about me: I am not a daredevil or one to do things like this normally. They were all going off the rope swing into the water and I just watched for a while, but then they finally convinced me to do it once. It was fun, but I kind of “leg flopped” into the water and smacked the back of my thighs on the water when I was going in – that burned! But at least I did it and had fun  🙂  And the water felt great today.After a few cannonball and spinning moves contests between Nick and Ross, we headed back down river.

We floated down the river some more and got out one more time to swim for a while. Nick also got out his fishing rod a few times when the water was calm and moving pretty slowly – he caught 3 fish today! He threw them all back, but it was exciting seeing him reel them in.

We were out on the river for about 3- 3.5 hours, I guess? It was a lot of fun. I’m glad we were able to go today with Ross and Jen! They had just bought a canoe and wanted to take it out, and it was good for us to go because it had been a while since we had the kayak out in the water.

We got back to the house and started prepping dinner. And what a dinner it turned out to be! So much good food.

While we were getting stuff ready, we got out these chips I bought today and some hummus.


I’d seen these Food Should Taste Good chips all over “blogland” but just started seeing them in stores here. I found this bag of multigrain ones on special today and I had a coupon that I had found online so I decided to try them. I hope I can find the rest of the flavors, because I can’t wait to try them now.

Um, I think these are my new favorite chips! They taste like really good tortilla chips with a little more texture – and they were really good dipped in the hummus.

We had so much good food tonight. If I could have this meal all year round, I totally would.


  • ground bison/ground beef combo burgers with local fresh tomatoes + lettuce, 1/2 slice provolone, ketchup mustard
  • corn
  • mini caprese salad with fresh tomatoes, mozzarella, basil, olive oil, salt + pepper
  • oven roasted potatoes (from the market) with salt, canola oil, garlic powder, smoked paprika
  • grilled green beans!
  • plus a Yuengling

Some of the veggies were from Jen’s grandfather’s garden – the corn, some of the cherry tomatoes, and the green beans, and the rest was either from their garden or from the farmer’s market. So good!


I loved the grilled green beans, and I think I could eat caprese salad all day every day.

We also had some amazing chocolate cake that Jen made, and I apparently ate it too fast to take a picture. All I can say is that it had coffee in it and peanut butter in the icing – yum.

and hey! I didn’t even fall out of the kayak today  🙂  Much better than the last time.

Already Baking

Nick was able to rig up one of our old vacuum attachments to fit the new one – so he gets the McGyver award for today  🙂  All the rugs are clean, more laundry is in, and I’ve already got a baking project in the oven as I type! I can’t believe we just got home from Honduras on Thursday….it already feels like it was so long ago.

While folding and putting away laundry and trying to decide on dinner this afternoon, I got into our huge bar stash to try this one.


Between us, Nick’s parents, and my dad, we had a bunch of bars leftover f rom the trip so Nick and I were able to bring home most of what we bought. I’m happy that I finally get to try some of these!


I haven’t tried any of the other Clif Mojo Bar flavors, but I really liked this Mountain Mix one. I loved all the chocolate chips, raisins, and the salty peanuts. Just like a pressed together trail mix! I think we have one other flavor, too, and now I’m excited to try it as well.

Dinner plans ended up changing, but it was still good and much easier than the other two options. We’ll be having those tomorrow night and Monday, respectively. I’m glad I had at least a few easy choices on the menu plan for this week because neither one of us really felt like cooking much tonight.


I put some sweet potato wedges (that I got for .49!) in the oven to roast for “fries” with some smoked paprika, garlic, olive oil, and salt. While those cooked, I put 2 tomato and basil pizza burgers in a skillet with a little oil and crisped them up.

Once the burgers were done, I topped mine with some baby romaine and a little olive oil mayo, put it on an arnold thin and heated up the rest of our roasted broccoli from last night.


I love sweet potato fries + ketchup. Easy peasy, and I had time to whip together a baking project. You’ll either see it tomorrow or Monday, but I will say that it involves this.


Nick and I got this big bottle of vanilla from Honduras and it smells amazing! I’m so excited to use it in all kinds of things.

The buzzer just dinged and my baking project is out!

I think we’re about to go pick some tomatoes off the plants and then I’m coming in and having this.


I got this whole wheat brownie for me from the farmer’s market today and can’t wait to dig in.


I love that it’s topped with oats. I hope it’s good!

Fried Friday

Thank goodness the weekend is here!

I felt like this week took forever to get through – every day just felt endless. At least the rain has cleared up a bit – it looks like we may have a pretty good weekend after all.

I think the slower-than-normal workdays have been kicking my snacking into overdrive.

Today, I brought some celery and carrots with some hummus and salsa.


Hummus + salsa is so good together!


And I am still not a big fan of raw carrots. I’ve tried them and tried them, but I guess it’s just not my thing.


I also added a small handful of pretzels for a little salt.

Even though today took forever to end, I did get a lot of stuff done and just have a few things left to finish on Monday before we head out of town.

I had some leftovers to work with tonight, but Nick and I decided to spend the last of our “spending money” for this month on a fun dinner out to one of our favorites. Thanks to the blog, I know how long it’s been since the last time we ate there  🙂  We haven’t been in 2 months! 2 months to the day, actually.

It was definitely time to satisfy my onion ring craving.


I had my usual: Buffalo burger with lettuce, tomato, ketchup, mustard, and onion + onion rings.

Just as good as I remembered  🙂

I’ve got a busy day tomorrow – lots of errands to get done to make sure we’re ready for this trip next week.

I hear my pajamas calling….and it’s almost time for What Not to Wear!

I love cooked carrots, especially roasted, but I just do not like them raw for some reason! I also do not like any kind of applesauce. I can’t take the texture.

Back to School

This morning, I had to go to a 2-hour class on how to use this new program here. We have a training in a system right now that has to be moved over to this new program, so I had to go learn how to do all that. I will say….even the classes that aren’t my cup of tea are kinda’ fun to go to – just because it gets me out of the office and doing something different for a while. It wasn’t horribly interesting, but it got my brain working in a different way than any normal day in the office.

We’re having okay weather here right now, so Nick and I ate outside. It’s not sunny and it’s a little muggy since it’s going to rain again, but we wanted to get out for the little time that we could.

I had the rest of the salad from lunch yesterday + an extra tomato


The olives in this made the salad – so tangy!

Plus the last of the corn + refried beans with a veggie burger. I was too lazy to pack any bread so I just ate it all with my fork.

Only 4 more hours until the weekend – Thank goodness!

Ay Caramba!

Happy end to your humpday! I’m happy the week is halfway over – are you?

It’s rainy and gloomy right now, but it was still nice at lunch time so Nick and I ate outside again today – warm, a little breezy – the perfect picnic weather.


I brought my other bison burger from the other night and had it on a baked sweet potato with lots of salt and ketchup. It was good  🙂


I also had a big salad with romaine, tomato, corn, and avocado. I love meals that fill me up but don’t weigh me down, and this is one of them.

We ran over to Walmart at lunch to look for some road tires for Nick’s bike, but were unsuccessful. Then it was back to work to finish the day.

I got hungry at work around 3:30 while sending letters, so I pulled out my snack for today.


Oikos was but 1 get 1 free AGAIN this past weekend, so I bought 6 – 4 for me, 2 for Nick. I wish they were always on sale – I just can’t afford to pay $2 for one yogurt container, but this and Fage are the only greek yogurt I can get here and Fage is never on sale.

I topped my yogurt with some of Nick’s granola from MixMyGranola– his has the lowfat granola, dried blueberries, sunflower seeds, and mini chocolate chips. He picked a good mix – I liked it a lot with the yogurt.

We both had chiropractor appointments after work, and my back/neck is actually in pretty good shape. I only needed an adjustment in one spot in my back so I guess everything is staying in place after the accident, which is great. She usually always has to adjust something in my neck, but not tonight!

Then….dinner plans changed. We were planning on going to get cracked + eat leftovers and tart at home. But then…

Our chiropractor told us that the new Mexican place in town opened up tonight, so we had to go try it out. Of course, I had taken my camera out of my purse at home since I thought we were just going to see her and then come home – so…no pictures, but it was really good! Lo siento amigos! Next time  🙂

Nick and I both got their carne asada tacos with fresh salsa, hot sauce, and cilantro. I don’t know what it is about fresh tacos, but I love, love, love corn tortillas for my tacos. I don’t know how they get them to not break or rip apart! Anytime I use any at home, they just don’t stay together well enough to actually make tacos, but these were perfect. I’m sure we’ll be back! It’s also a good thing I ate that big salad at lunch because I had no veggies with dinner and it was fabulous anyways.

Now, I’m about to dig into this:

Are you excited for Top Chef Masters tonight? I hope I can stay awake long enough to watch it – we don’t have one of those fancy DVR things   🙂



Do you eat the potato skin? I love it – especially on sweet potatoes and roasted/grilled potatoes. So crispy and good.

Well, we didn’t get our car back tonight. I guess one part didn’t fit right, but it should be ready tomorrow! I’m really ready to have the car back – we’ve been squeezing into our little truck for the past few weeks, and I’m running out of foot room with all the bags I take to work every day.

My lunch held me over pretty well, but I did get hungry enough for my green smoothie around 4 this afternoon.

Super green to the rescue!


This one was

  • 1 cup Almond Breeze
  • 2 -3 cups spinach
  • 1/2 banana
  • 1/2 Tbsp peanut butter

This was the perfect amount to get me through until dinner.

We came home and finished thawing the buffalo while prepping the rest of dinner. I was hoping it would stay nice long enough for us to grill out (Nick’s favorite thing to do) and it turned out to be the perfect weather. So nice that we sat outside to eat.


Nick grilled us up some buffalo burgers while I made the sides.


I cooked up some fresh corn on the cob we got today, and made some of those zucchini crisps that Nick likes so much. He requested them tonight!



Nick requested this instead of a cake after we saw it on Food Network a while back.


I even had to go buy a springform pan just to make this since I didn’t have one.



The Un-Springing…

Are you ready?



I made Giada’s Chocolate Honey Almond Tart, and it is the most decadent and one of the easiest desserts I’ve ever made!


It is not low fat, low sugar, or low anything.


I cut no corners, made no modifications.


And every single bite was amazing.

What a way to end a birthday – Nick had 2 slices! I did cut ours into 12 slices, and you could cut it even smaller. It’s pretty rich, and I have no clue how Giada figures you only get 6-8 servings out of this! I would definitely recommend the recipe, though. It was simple to make and amazing to eat.

I’ve got to finish some laundry and prep my lunch and maybe breakfast for tomorrow.

What’s your favorite thing to make in a springform pan? Now I need more ideas  🙂

I’m so relaxed now! I really, really wish this yoga class wasn’t 45 minutes away  😦  I’m just going to have to plan ahead and go whenever I can.

I knew I was going to go to yoga tonight, so I packed a snack that would carry me through going home, changing, driving out there, through the hour of yoga, and through the drive back. I packed a good one!


Yup, I ate this whole bar with my yogurt.


Normally, I wouldn’t spend this many calories on an afternoon snack (the bar is 250 alone), but I needed something that wouldn’t fill me up too much, but that would be enough calories/energy to get me through until around 8 tonight. I ate this at 3:30 and it was the perfect thing. This was also my first time trying an Honest Foods anything since I can’t get them here. Christie brought it to me when they came to visit a month ago, and I really liked it! Maybe it’s a good thing I can’t buy them here?  🙂

I. loved. yoga. tonight. I really am sad that this class is so far away. It’s held at a church so you don’t have to pay to go – you can just donate when you want. I really love taking yoga classes more than doing it on my own, but all the places I can take classes from are so expensive, and we really don’t have any extra money right now. I may just have to get creative and start doing it more on my own and just go to classes whenever I can.

Regardless, it was just what  I needed. I’m glad I did this – it definitely helped stretch me out and just release tension, which will be nice come Saturday morning when we’re running our race.

Dinner was quick and easy, thanks to leftovers in the fridge. I just came in the door, dropped my stuff, and grabbed a plate.


I heated up one of the black bean burgers from last night, some of the sweet potato fries, grabbed 2 slices of avocado (cause I haven’t had enough today, apparently) and sliced up some tomato.


I’ve got to get working on packing my lunch for tomorrow, which means finding something to take!

Last Chance Baking

It is pouring outside! The rain held off for most of the day, but it is coming down now. I’m a little tired of the rain, but I do like the sound of it.

Today felt so much like a Monday to me – this week is going to be weird again, and I’m probably going to have all of my days confused again. Oh well – it should be a good week, no matter what day I think it is  🙂

Lunch today was mostly leftovers and I actually wanted it when lunch time came around!

Our office went out for smoothies at Elderberry’s to celebrate one of my co-workers’ birthdays, but I didn’t get anything! My stomach was being strange and none of their smoothies sounded good today -I know, what’s wrong with me? I can’t believe I didn’t get one.

After we got back and I started back on work, I got a little hungry right before we went home, so I ate some cantaloupe and pineapple.


I wasn’t sure if we were going to be able to run after work, but I didn’t want to go on a hungry stomach. Of course, the entire ride home from work it was raining! But, it cleared up a few minutes after we got home  🙂  I’m so glad we got to run today – I need to make sure we get in a few runs this week and next week since we have a race on Saturday.

that’s right – Nick and I signed up for our first ever 10K AND it’s a trail run!  I’m so excited about it. That will be the longest I’ve ever run so far, and I can’t wait to see what it’s like to run a trail run around here.

The only bad thing about the run this afternoon was I got attacked by a small dog down our road when I was coming back home! There’s a few small dogs across the corner from us, but they’re usually in their fenced in yard. Today, their owner was outside doing some stuff to his truck and 2 of their smaller dogs were out. I was running home and they both were barking and circling me (which is pretty normal), but then one of them jumped up on my leg and nipped at me! I have a nice little bruise/welt from his claws/little bite. The guy didn’t even apologize! If they’re out again, I’m going to say something to him, but they’re usually in their yard so I’m hoping they stay there.

Dinner tonight was easy since we have so much of that ziti leftover! I made a salad with romaine + red onion + tomato + balsamic + olive oil + salt + pepper


and I had a serving of the baked ziti from the other night


I just finished baking my 3rd trial batch of cookies for the cookie contest, and I think we have the winner! This last batch had a few changes from the last, and I think this recipe I made tonight is the one – I have to have it sent in by 6/1 and I’m glad I was able to try out a few tweaked recipes to see which one worked best. I’m excited!

I promise to post the recipe as soon as I can – I know I’m sending this in for this cookie contest, so I’m not sure when I’ll be able to post the recipe, but it will be on here.

I’m off to put these cookies away and finish my book! See you for a new breakfast  🙂

Okay, so I guess I lied about the normal blogging schedule returning today  🙂  I thought for sure we would eat breakfast at home and I would blog after – when that didn’t happen, I knew today would just be totally fun and off schedule, and it was.

Nick and I woke up around 7:30, layed around and watched a little Today Show to see the weather, then took showers and drove to Blacksburg for breakfast. We really wanted to go to this great greasy diner place for breakfast but they were closed! So, we walked around the corner went to Gillie’s, which is this great vegetarian place, since they also have awesome breakfasts.

I went away from my normal choice and ordered their Spanish Frittata, which was eggs topped with tomatoes, black olives, artichokes, spinach, potatoes, feta and a little cheddar with some balsamic vinaigrette on the side.


This was so good and light and very different than the frittatas I’ve made and had before – nothing was actually in the eggs-  it was just a thin layer of eggs on the bottom and all the veggies/cheese completely on top of the eggs. I loved all the veggies and flavors going on in this dish.

Colorful plate + 2 cups of coffee is a good way to start your day.


After breakfast, we went over to the mall for a little while for Nick to look for some dress shoes – and this is the bad thing about living in a kind of small town. There aren’t many stores here and really not many choices for nice dressy shoes for him. I think we found a few possible options, but we’re just not sure yet.

We were trying to decide whether to go hiking today or not since it was really cloudy and overcast today. It just looked like it was about to pour all day here. After we got home, and while we were deciding, we ate some leftovers to clear some room in the fridge.

I had a serving of the pork/veggie/rice stirfy from the other night, plus the last of the grilled zucchini/squash from our cookout on Friday.


It looked a little better outside once we ate, so we changed clothes and headed out to hike. That is one thing I love about where we live – we have a bunch of places within 10-15 minutes of our house to hike, and I love being that close to so many amazing views.

There were tons of people at the falls today! We got to the parking lot at the end of the trail and couldn’t even find a spot – we debated going back home, but we really wanted to be able to do something outside today and enjoy our day off so we parked along the road and started up the trail.

It still amazes me that this is 10 minutes from my house (not including hiking time)  🙂





We also saw this crazy mushroom growing out of a tree trunk – it was pretty neat.


After 2 hours of hiking and watching the waterfalls, we got home and started on dinner. Of course, as soon as we got home, it started raining – BUT, it stopped long enough for Nick to be able to grill our burgers.


Nick grilled us some lean burgers and the romaine for salads. Add on some whole wheat buns and “baked” beans, and that’s a great cookout meal. For the baked beans, I just took a can of vegetarian baked beans and added:

  • 1 can northern beans, drained/rinsed
  • garlic salt
  • onions, chopped
  • mustard
  • apple cider vinegar
  • Worchestershire sauce
  • pepper
