Hazelnut Spike

Are you ready for another Chocolate Spike review? I hope so  🙂

I recently bought one of their “spikes” to try, which is basically their take on a turtle. However – this trumps ANY turtle I’ve ever had from anywhere else. You can choose milk or dark chocolate, they’re made with their homemade vanilla caramel, AND you can choose between pecans, cashews, almonds, or hazelnuts.

For my first spike, I chose the dark chocolate hazelnut.


I love that they don’t completely drench them in chocolate – they leave the sides uncovered so you can see the gooey caramel oozing out the side.


I think I definitely need to try all the other spikes…just to see which one I like the best…


My favorite part of these? They use whole hazelnuts – not little bits and pieces – whole ones. It’s like a hazelnut and caramel sandwich with dark chocolate as the bread.

What could be better than that? Maybe 2 of them?  🙂 Or 5.

The Anatomy of a Truffle

I think this may be my favorite thing to do! Reviewing and taking pictures of chocolates is my total dream job.

How can you go wrong with such a perfect subject?

After our lunch date the other day, we stopped into The Chocolate Spike to get a few treats. I decided I needed to try their Easter truffle before it was gone…and I’m very happy that I did.


This was a coconut creme filled truffle with a dark chocolate shell, coated with coconut shavings and few little Easter sprinkles. So festive!

As soon as I took this one out of the package, all I could smell was coconut. I could not wait to cut into this.

I was expecting the inside to be a chocolate ganache filling, like their other truffles, with coconut flavoring. I was very surprised to see this when I cut into it!


I think they should have a coconut truffle on the menu at all times. This is probably one of my favorites – the dark chocolate was the perfect complement to the sweet coconut flavor, but nothing was overwhelming.

Another great creation! Now I just have to figure out which ones I haven’t tried yet!

Day of Operations

Well, the rain let off for a little while on our way home from work, but it’s been pouring ever since. I know we still need the rain here, but I am getting really excited about the beautiful weekend we’re supposed to have!

Operation Tea seems to have just invaded my day – it’s unstoppable!


I got a fat free steamed milk while we were out at lunch so I could make my own “tea latte” in my office. I just added this Chai tea bag and let it sit for a few minutes before enjoying. It was really nice on this cold and drab afternoon. I LOVE tea steeped in milk, so I’m hoping I can remember to start doing this on my own more instead of paying so much for a cup of steamed milk  🙂

With my “latte”, I finally broke into this bar I got in my Secret Blogger V-Day package!


I know, it took me forever. I guess I was just saving it for the perfect day.



I had about 1/4 of the bar and it was the perfect little accompaniment to my tea – this chocolate is very dark, which I love. I can’t wait to have more!

Dinner tonight was based on a recipe from Eating Well for Beef & Cabbage Stir Fry with Peanut Sauce, but I made a few changes.


  • I used chicken instead of beef
  • I only used 2 Tbsp pb, 1 tsp sugar, and added 1 tsp hot chile garlic paste to the sauce
  • We put ours on brown rice and had edamame on the side


I love the spicy kick from the chile paste with the peanut butter – I think I would actually add more next time! The sauce was really good, and it would work well with any protein in this dish (beef, shrimp, tofu, etc).


Why the Day of Operations you ask?

– Operation Tea instead of Crappy Coffee started today and has been going great! I may even need to buy more tea at some point – that will take a while, though. I have a lot to get through  🙂

– Operation Lawnmower was successful! Nick went this morning once he dropped me off at work and we are now the proud owners of a brand new lawnmower! Exciting, huh?

– Today is actually a very special day. Nick’s Dad (of Bob’s Breakfast fame) is having his 2 year heart-iversary today. He had emergency open heart surgery 2 years ago today, and I am so happy he is here to tell the tale of that crazy day and week. You can read more about what happened here. I just wanted to say that we love you and are proud of you and can’t wait to see what comes next!


So….that baking project I was going to tell you about? Eh. Not so much. It just didn’t turn out well. I may try that recipe again with some tweaks, but it wasn’t good enough to share. Oh well. The good news? I just took out another baking project, and I have a feeling this one will be great. I’ll wait until Nick and I try them to make sure they’re good enough to post, but they smell pretty darn good right now.


What’s your Biggest Cooking/Baking Flop?

This last baking project wasn’t horrible, but the flavor just was not at ALL what I imagined. The texture was good, but nothing else really. I hate to throw stuff away, but I knew we wouldn’t eat these and I didn’t want to give them to anyone else, either. I also tried making this lemon pasta dish one time that just did not turn out at all. Even if we don’t really care for something, we usually eat it that first night, but neither one of would eat the lemon pasta dish. I’m not sure if the recipe just wasn’t a good one or if it was me….but ick.

Day of Sweets

Whew!  What a weekend so far!


Sorry I don’t have many pictures from this weekend, but I do have the ones that matter  🙂


Today was a lot of fun, but really busy!  Nick’s parents are remodeling their kitchen so the boys were tearing up the kitchen floor today while the girls shopped – predictable? Maybe a little.

We got to go to the awesome Amish market here, and I got a lot of good food items, which I’m sure you’ll see soon.


Tonight, for our Valentine’s Day celebration, we went to a dinner at Nick’s parents church and watched the movie Fireproof. I hadn’t seen it yet, and while it had its cheesy parts (like all romantic movies), it was a really good movie.


We just got back and I may have eaten one of Beadie’s brownies with a glass of milk  🙂  I needed some dairy!



One of the BEST parts of the day was when Nick gave me my Valentine’s Day gift!


I bet you’ll never guess….





um…..yeah.  A whole BOX of truffles and chocolates from The Chocolate Spike!!!!  Does he know me well or what?




I’ll give you a run down of the flavors.


Is it sad that I know what they are and I haven’t even tried all of them?  I just know from seeing them in the store  🙂

Special Delivery and Review #3

Woohoo, I LOVE getting real mail!!!

First, my Valentine’s Day Secret Blogger Package, and now my share of the tea prize from the BSI Date contest that Sarah held a week ago.

Now…for another review of what is quickly becoming my favorite place.


Since I had to go get Sarah’s BSI prize the other day, I decided to try another truffle from The Chocolate Spike.

This one is called the Spikey Rum Truffle and is a dark chocolate truffle with a hint of rum. The outside is completely covered with roasted cocoa nibs.


I have a feeling I’ll try every one of their confections pretty soon – it’s hard to resist!

Just One Post Away…

A “Heart”-y Meal

I still just can’t get over how nice the day was today!  I hope you’ve had a good Saturday  🙂



I finished all the laundry today, except the sheets, which I’ll do tomorrow. It feels nice to have most of that done!



Tonight’s dinner was created as my Healthy Valentine entry for the Oh, She Glows contest -and it turned out good!


Heart-y Beef Stroganoff








This meal, not only “had” heart, but is pretty heart healthy!


The stroganoff included:

  • 1 tsp. olive oil (rich in monounsaturated fats)
  • 1/2 red onion, diced (chromium, vitamin C, flavonoids)
  • 1 lb. mushrooms, sliced (selenium, riboflavin, potassium, niacin, phosphorus)
  • 1 lb. Laura’s extra lean ground beef (protein, vitamin B12, vitamin B6)
  • beef broth
  • water + 2 Tbsp cornstarch
  • 1.5 tsp dijon mustard (selenium, magnesium, omega-3 fatty acids, iron, calcium, zinc, etc)
  • 1/4 cup fat free plain yogurt (calcium, vitamin B2, zinc, potassium, protein)
  • 2 cups (cooked) fresh whole wheat pasta
  • diced tomato
  • salt, pepper, thyme



This is such a comfort food meal!  I loved that it’s so easy to make really good, healthy, comfort meals that still taste great.  


Since the goal of the contest was to make a Valentine’s Day meal/snack/dessert, I knew I wanted something filling and comforting. What is more comforting than beef stroganoff?


Served with a tomato heart and steamed peas on the side, this was a perfect Healthy Valentine’s meal. I know, I know….it’s not Valentine’s Day  🙂  We’ll be out of town that weekend anyways, so I figured I would test out my healthy meal tonight instead – plus, I had to make Angela’s deadline!  🙂


Of course….what’s a Valentine’s meal without a dessert?








We made a mix of chocolate dipped almonds and pretzels – and they turned out SO good!  The perfect sweet ending, but still pretty good for you!





I’m enjoying this plate and watching “Robin Hood, Prince of Thieves” with Nick – it’s a bit cheesier than we remember, but still a good movie  🙂

I’m so glad I’m doing another Chocolate Spike review – mainly because that means I was able to try another one of their chocolates!  🙂

Last week, I mentioned a snack I had but couldn’t post yet – well, here it is!

The Chocolate Spike currently has special Valentine’s Day flavors, and I had the pleasure of trying their Fire and Ice Truffle!


This dark chocolate truffle had cinnamon and peppermint flavors together (hence the fire and ice). I wasn’t sure how I would like the two together, but it was so good! The peppermint wasn’t too strong, so it just created this almost cooling effect that was perfect with the warmth of the cinnamon and the deep, smooth, dark chocolate.

I love the little V-Day sprinkles, too   🙂


So rich!

I would definitely get this one again – although, I would get anything from The Chocolate Spike!

Since I’m also participating in Lee’s First Annual Valentine’s Day Blogger Exchange, I thought I would list a few of my favorite things since my blog hasn’t been up and running for very long. She suggested doing this, and I think it might be helpful!

I woke up craving some pumpkin and banana oatmeal! Too bad I had used the rest of my pumpkin in my oatmeal yesterday!I had already started thinking about what else I could eat, and then….

then I remembered that I had frozen some amazing pumpkin/chocolate chip bread a few months ago  🙂  I took a slice out of the freezer and popped it in the toaster oven for a few minutes while I made my oats.

The combination ended up being:

  • 1/2 cup old fashioned oats
  • 1 cup water
  • pinch salt
  • 1/2 sliced banana
  • cinnamon
  • 2 Tbsp (total) of walnuts and almonds
  • 1 slice pumpkin chocolate chip bread, crumbled on top

The outcome?



One bowl of amazing oats. I forgot how much I love this bread!  Good thing I still have a few pieces in the freezer  🙂

I also had about a cup of skim milk to complete my breakfast.


Monday at work is…..Monday at work. What can I say?  I hate when the alarm goes off on Monday mornings. For some reason, it’s worse on Mondays than on ANY other day, right?

Lunch today may seem a bit familiar to one last week. I used the last of the refried beans to make a wrap with ff cheese and hot sauce!


I also had a salad with romaine, tomato, avocado  and a little lime juice…


And some fruit!  Grapes and strawberries to finish off my meal.


Exciting thing about today – I’m going to a yoga class tonight! I’m SO excited. It has been a long time since I’ve been to an actual class, and this one is 1:30 long – it should be great. I’ve taken classes with this lady before and love her, so I am looking forward to this WAY too much  🙂

Around 4:30 or so, I’m going to have this snack to hold me over until and through yoga –


Greek yogurt + Pom arils + semi-sweet mini chips = love  ♥

Dinner, and the dinner post, will probably be a little later than normal. The class is from 6:15 – 7:45, and I won’t be eating dinner until after class.
