Today is my Dad’s Birthday  🙂

I know he reads the blog, so he better see this since his presents won’t be at their house yet!

We don’t live too far from our families, but I do wish we lived closer on birthdays.

I love my Dad – we’ve grown so much closer over the past 10 years, and I’m so proud to call him Dad.

I am thankful that he is supportive of anything I do, that he can always make me laugh, that he’ll sit and watch football with me for hours upon hours, and that he and my mom are still going strong, almost 32 years later? 32, right?

I’m so, so happy that I had him there to walk me down the isle and give me away. Although, he still says that he gave Nick a 5 year guarantee period, where Nick could “return” me at any time  🙂

I am most excited that he was able to go to Honduras with us this summer. I knew as soon as he said yes that he would fall in love with Jovenes like we did – and I think I was right! He was probably the most important person on our trip this summer, since he was the only one who really knew what to do on that roof! We could not have done this job without him.

And did I mention that he’s lost over 25 lbs since Christmas? Yup, I’m proud of him for that, too. Extremely proud. He has been working so hard, and has just done amazing.

I’m sorry I can’t spend today with him, but I hope this post will stand in until I see him next month – and the gifts that are on their way will more than likely make him smile.

I had no clue whatsoever for breakfast today. I just could not decide. I guess it’s good that I can’t decide because ALL of my choices are good ones, but I hate that I’m so indecisive sometimes!

Since I’m working from home today again, I decided to go easy and make another smoothie since I have all kinds of snack options if I need them.

I took this packet of the Original Blend Amazing Meal from the sample pack I ordered 2 weeks ago and  blended that with some almond milk, 1 peach, and 1 Tbsp of cinnamon raisin pb (but I picked all the raisins out!). I just wanted the cinnamon flavor  🙂

I also peeled my peach since I don’t have a vitamix or anything. My blender works, but it’s not superpowerful, so I peeled it and just ate the chunks with the peel before drinking my smoothie.

Sound the trumpets! We sold our truck! Hallelujah!

We have been trying to sell this truck for over a year, which proved to be much tougher than we thought. I think we’re selling it to a good family, which makes feel better about it since Nick and I got engaged in that truck  🙂

Telework went well again today, but it is hard getting used to a slower connection / loading on my computer at home compared to being in the office. That was the only thing that was frustrating today.

I got hungry this afternoon, so I grabbed a sample packet I bought last week to try.

Since I ordered the sample packs, one of them came with a little sample of the Kids SuperFood and it sounded pretty good! It has all kinds of stuff in it, not just greens, so I was excited to try it.

I mixed this packet with a mixture of skim + almond milk and a few ice cubes in the blender. The verdict?

I really liked this one! It tasted kind of like a chocolate malt flavor – not like a super chocolatey cup of milk, but it was tasty. This one does have soy protein in it, though, which is different than their other products.

I also had a half banana that was leftover from breakfast yesterday with some dark chocolate dreams peanut butter. All in all, it was a good chocolatey snack today.

After my snack, I tried to take my computer outside to finish out the day, but I couldn’t see the screen! So I came back inside and worked until about 5:15 – Mondays are my busiest and the slower loading screen was not helping me today. BUT I got everything done.

While Nick was on his way home, I got the pork marinating for tonight and I’m glad I did that early! He came home and I left with him to meet the family that’s buying the truck. We let them take it and drive it for a while, then they brought it back here and Nick will finalize everything tomorrow. Thank goodness! I’m glad everything went well and that we found someone to buy it, but it did push dinner back a bit.

We both had a salad tonight since we’re swimming in tomatoes right now. I can’t complain though – every one is delicious. I had some romaine, black olives, and a bunch of  tomatoes.

For the pork, I marinated it in some oil, balsamic, honey, salt, and pepper. Nick grilled those and the peaches, and all I had to do was heat up some of our lentil / brown rice patties from last night!

Grilled fruit is so good. I’m sad we didn’t grill more tonight, but then I knew we wouldn’t have any for the rest of the week 🙂

I’ve already got my lunch packed and I’m ready for pajamas and some fun reading.

Ah…..today was so long….both of my supervisors at work are gone this week (and next!), so work is going to be super slow until July 6th – do you think I can make it? I should enjoy this time because there are times when we are absolutely slammed, but I guess we’ll see how next week goes  🙂

I had more liquid goodness for a snack today, even though I had already a smoothie.

This was a good green smoothie – I haven’t had one in a while!

  • 1 cup milk
  • 1/2 banana
  • 1 Tbsp Shaklee chocolate meal shake
  • 2-3 cups spinach

I loved the little hint of chocolate in this one – it went really well with the banana.

No run today, only because I already ate dinner and can’t run on a full belly! Nick wanted to mow the yard tonight since we’re going to be gone this weekend. I made dinner as soon as we got home so he wouldn’t have to be out there mowing our hill for over an hour and be starving the whole time.

I’m glad I had an easy dinner to make tonight – I found this Smoky Ham and Corn salad recipe in the  new Eating Well and knew I had to make it.

The dressing was so easy to make  and the smoked paprika in the dressing totally made this recipe! Please, please, please buy some smoked paprika if you don’t have any – you will not regret it. And maybe send us some more since we’re running out  🙂

I had mixed greens from the farmers market and some local corn that I cut off the cob to use in the salad. I just quickly made the croutons by chopping up 1 slice of whole wheat bread, tossing it with a little olive oil and salt and put in the toaster oven for about 5 minutes on 350. Perfectly crispy and I know everything that’s in them.

And then there’s this.

I just had my last birthday cupcake – they were good while they lasted. This frosting is just too good. There is one left, but I’m saving it for Nick since I know he’ll need a snack once he’s done mowing.

I’ve got to pack for this weekend! I’m so excited to be seeing my parents and Nick’s this weekend – it should be a fun time.

Our Baby is Back

We got our car, we got our car!!!

Sorry for the gritty picture – I took it through the window before I forgot! We are so happy to have her back – everything is fixed, it is running well, and we are psyched. Hooray!

Before our car-picking-up excursion, I drank a green monster at work:

  • 1 cup Almond Breeze
  • 2-3 cups spinach
  • 1/2 banana
  • 1 tsp pb2

Meh – I really did not want to drink this, but I was hungry and needed a snack. I think I just didn’t want a smoothie? It tasted good – I just didn’t want it. I’m glad I had it though! It held me over until dinner was ready.

We left work at 4:30 so we could get to the auto shop before it closed and pick up the car. I know we are so lucky to have more than one car, and not having this one really didn’t change our schedule since we ride together every day anyway, but we both really missed having the car. We drive this car every day because it gets the best gas mileage of the cars we have, plus there’s enough room for us, our bags, computers, and whatever else we’re carting to and from work.

Once we got home with our baby, I went in to start working on dinner / breakfast tomorrow and Nick worked on the car and getting all the stuff back in it (floor mats, cds, etc).

I had a bunch of veggies I wanted to use in dinner tonight, as well as in breakfast tomorrow, so I worked double duty tonight.

Since I knew I wouldn’t have time to prep / cook this breakfast in the morning, I made it easy on myself and diced all the veggies I needed for dinner and breakfast.

You’ll have to wait until the morning to see breakfast, but dinner turned out really well!

Very Veggie Mac

  • 1 box whole wheat macaroni (mine was 13 oz)
  • 1/2 red pepper, diced
  • 1/2 yellow pepper, diced
  • 1 lb. asparagus, chopped
  • 4 oz. mushrooms, sliced
  • 1 cup fat free evaporated milk
  • 1 cup cottage cheese
  • 1/2 cup ricotta cheese
  • 4 slices cheddar cheese
  • 1 tsp dry mustard
  • salt, pepper
  1. In large pan, cook peppers and mushrooms until softened. Take out of pan.
  2. Fill pan with water and bring to a boil. Add in pasta.
  3. In the last few minutes of the pasta cooking, add in asparagus and cook until crisp tender.
  4. Preheat oven to 350.
  5. In smaller sauce pan, add in milk and 2 slices (or use shredded) cheeses. Mix together and let cook over low-medium heat until melted together.
  6. Stir in salt, pepper, and dry mustard into cheese mixture.
  7. Mix macaroni, veggies, and cheese sauce together and pour into baking dish.
  8. Sprinkle with remaining cheese (slices torn or shredded) and bake 30 minutes.

We had ours with more veggies ( broccoli ) and some smoked turkey Nick’s dad brought us this weekend.

I loved all the veggies in the pasta! I think I would make a little more sauce next time, but it still had great flavor.

I’m thinking about having a slice of that tart….but we’ll see if I actually am hungry enough for it tonight. It may have to wait until tomorrow – good thing we have plenty of it for this week!

Well, we didn’t get our car back tonight. I guess one part didn’t fit right, but it should be ready tomorrow! I’m really ready to have the car back – we’ve been squeezing into our little truck for the past few weeks, and I’m running out of foot room with all the bags I take to work every day.

My lunch held me over pretty well, but I did get hungry enough for my green smoothie around 4 this afternoon.

This one was

  • 1 cup Almond Breeze
  • 2 -3 cups spinach
  • 1/2 banana
  • 1/2 Tbsp peanut butter

This was the perfect amount to get me through until dinner.

We came home and finished thawing the buffalo while prepping the rest of dinner. I was hoping it would stay nice long enough for us to grill out (Nick’s favorite thing to do) and it turned out to be the perfect weather. So nice that we sat outside to eat.

I cooked up some fresh corn on the cob we got today, and made some of those zucchini crisps that Nick likes so much. He requested them tonight!

Nick requested this instead of a cake after we saw it on Food Network a while back.

The Un-Springing…

I made Giada’s Chocolate Honey Almond Tart, and it is the most decadent and one of the easiest desserts I’ve ever made!

It is not low fat, low sugar, or low anything.

I cut no corners, made no modifications.

And every single bite was amazing.

What a way to end a birthday – Nick had 2 slices! I did cut ours into 12 slices, and you could cut it even smaller. It’s pretty rich, and I have no clue how Giada figures you only get 6-8 servings out of this! I would definitely recommend the recipe, though. It was simple to make and amazing to eat.

I’ve got to finish some laundry and prep my lunch and maybe breakfast for tomorrow.

What’s your favorite thing to make in a springform pan? Now I need more ideas  🙂

Thank you for all your tips!

The sad thing? My alarm clock is already in a place where I have to get up to hit snooze/turn it off! I guess I’ve gotten used to getting out of bed to hit snooze and jumping back in. We’ll see what else works, though – I got some  great ideas from your tips and suggestions!

I don’t know why I’m so cold today, but I have been freezing all morning in my office. I was starting to get hungry around 10:30 so I got out my green smoothie for today and drank it as fast as I could. I really didn’t want a cold drink, but I wanted my smoothie so I tried to get it over with as fast as possible!

The normal mix, lately:
•    1 cup almond breeze
•    ½ banana
•    2-3 cups spinach
•    ½ Tbsp flaxmeal

It was good, and it got me through until lunch.

All I can say is I’m glad I have a lunch that I can heat up – I’ve sitting here in my favorite granny sweater trying to keep warm while eating – at least I’m thawing out a bit.

Lunch may look a little familiar, but a little prettier – at least I tried to make it look a little different.

Green Is Good

Thank goodness today is already half over! I’m ready for the middle of the week to be here – we have another fun / exciting weekend coming up, and I’m tired of waiting!

My eggs/grits/fruit held me over until around 10:30 so I drank my green smoothie to hold me over until lunch. Perfect! I can’t really explain why I like them so much or even really explain the flavor, but I love them.

Sorry for the lunch repeats, but you might as well get used to them for this week  🙂 I’ll try to switch some stuff up just to keep it interesting – the pictures may look monotonous, but I love the flavors going on!

Today I brought some of the barley/corn/bean/tomato mixture and topped with a sliced roma tomato and 1/4 avocado. The bites with big hunks of avocado were the best, so I saved a few to have with my last couple of bites.

I also had more broccoli today. I cooked one of those steamer bags of the broccoli and it makes a lot! I have more to use for lunch tomorrow, too. That makes it easy for me though – I just bring this container in on Monday, heat up what I want and put it back in the fridge for the next day. One less thing to worry about packing in the morning!

and another apple – this was okay. Not the best apple I’ve had, but it did give me some crunch.

These green smoothies I’ve had the past 2 days got me thinking.

I am going to try to have a green smoothie every day that I can in June and see what differences (if any) I see.  I say “every day that I can” because I know we’ll be out of town a few weekends so I probably won’t have the materials/equipment to make one. But, I want to see if these really do make me glow! Plus, they taste great and I love that I’m getting in a good dose of nutrition in such an easy way.

Finally On Time

First the first time in a week and a half, I actually got up on time! It helped that Roxy was laying on the end of our bed, attacking my feet through the covers anytime I moved, but whatever. At least I wasn’t rushing around this morning!

So, after all the talk about cold breakfasts yesterday and the great suggestions, what do I have this morning? A hot breakfast  🙂

Last night while we were running, I kept thinking about having eggs for dinner last night. I eventually talked myself out of it because I knew I wanted them for breakfast today, too, and I didn’t want the same meal in a row.

Yum. I made 2 over easy eggs with some pepper and chile garlic sea salt and had them over some grits.

Plus 1/2 a huge orange Nick and I split this morning, plus a bite of banana before adding the rest of my half to my smoothie.

I also made a green smoothie to take with me to work – I am loving this almond milk!

  • 1/2 Tbsp flaxmeal

 

Have you tried almond milk? Do you use other types of nondairy milk?

I love the flavor of this almond milk, but I have never tried soy milk. It scares me a little bit although I’m not sure why  🙂  I also don’t want to eat/drink too much soy since I know too much is not necessarily a good thing, and I would rather have my soy intake come from black bean burgers and those tomato basil pizza burgers!

I don’t know what the deal is with my stomach, but it has been weird all afternoon! That did not make for a good run, but at least we went.

This afternoon, I had a green smoothie and it was my first time trying almond milk! I bought the original unsweetened this weekend to try in my green smoothies, and I loved the flavor!

  • 1 cup Almond Breeze
  • 1/2 banana (the other half went into my breakfast cookie this morning)
  • 2-3 cups spinach
  • 1/2 Tbsp ground flax

The almond milk made such a difference in the flavor of the smoothie compared to when I’ve made it with skim milk. I don’t know that I can buy it every week, but I think I’ve converted to almond milk, at least in my smoothies. Yum.

I got all my stuff done this afternoon and our system was fixed, thank goodness, so it didn’t slow us down for too long. For some reason, I was starving this afternoon. I didn’t anything else to snack on, so I waited until I got home, grabbed some mixed nuts, and headed over to the chiropractor. 

Great news! I’m doing really great after everything with the accident! She had to do one adjustment, but I didn’t even need the electrode therapy today. That made me pretty happy – I guess I’m getting all back to normal.

Since I got back earlier than we thought I would, we went out for a longer run than normal – we have that 10K race on Saturday and wanted to get one longer run in this week to stretch out. I ran a little over 5 miles, and Nick ran 6. My stomach was still strange the entire time, so I ran slower than normal to keep from getting cramps. At least the weather was nice, right? I am excited for the race this weekend, though. It should be fun to do our first 10K Trail Run together and it’s 2 days before Nick’s birthday!

I’m glad we had some leftovers in the fridge – it was 8 pm before we ate dinner!

 

For some reason, my pictures won’t load? We had more of the pasta from last night – I mixed mine with some of roasted broccoli and some olive oil.

I promise to post the brownie recipe this week – I was going to tonight, but I’m having some computer issues, but they’ll have to wait.

Work, schmork. Nick and I ate our lunch while watching previews of LOST tonight and a really funny cartoon video of a LOST recap. Then we went to Target to get a new cd holder before heading back to the office.

I had a snack around 3:30 this afternoon to hold me through our workout, which was a weight watcher chocolate smoothie packet mixed with 1/2 cup milk, 1/2 cup water, 5 frozen cherries (the last of a bag) and 2 cups of spinach. This was definitely was not the prettiest OR green, so it did not get a close up 🙂

BodyPump didn’t happen, but we’re planning on going Friday for the last time. We were going to go today, but Nick forgot his gym bag at home so we just came home and ran since we had another nice day! I was so excited to have 2 nice days in a row – it feels like it’s been way too long. I’m glad we were able to get out and enjoy it since I think it’s supposed to be rainy again tomorrow and this weekend 😦

I went 3.9 miles today and my legs felt great – not as tight as yesterday and I made sure to stretch really good before and after. I’m starting to feel more like normal after the weekend of sitting and eating.

I’d been waiting for dinner all day. I haven’t made regular spaghetti in a while, so I was excited to have it.

Spaghetti Bowl

Sauce:

  • 1 lb. lean ground beef
  • 6 oz. cremini mushrooms
  • 1 large (28 oz.) can of crushed tomatoes
  • 1 14 oz. can tomato sauce
  • 1 tsp tomato paste
  • 1/2 cup water
  • oregano
  • garlic powder
  • chopped onion
  • italian seasoning
  • crushed red pepper
  • salt
  • pepper
  1. Heat pot over medium heat.
  2. Add mushrooms and cook until browned. Add in onions now, if using and let cook until softened.
  3. Add in ground  beef/other protein source of choice and let brown.
  4. Stir in crushed tomatoes, tomato sauce, tomato paste and water. Stir together.
  5. Add in all spices to taste and let simmer 10 minutes.

I made a layered pasta bowl for dinner and it was good! 1.5 cups spinach on the bottom, 1/2  cup green beans, 1 cup whole wheat angel hair pasta, 1/2 cup of so of the sauce.

I cannot wait to try all the new stuff! Now, I’m counting on Heather, Sarah, and Sweetie Pie to give me some suggestions on how to use my ONE packet of Jay Robb.
