Busy, Busy

Good morning!  🙂 I’m so happy it’s the weekend.

I have so much stuff to do this morning, but most of it will be fun!

  • bank for $ for market
  • farmer’s market
  • grocery store
  • bookstore for gifts
  • eye appointment to order contacts
  • library? we’ll see.

Then back home to eat + get ready for an afternoon on the river!

Last night, I mixed up some muesli so I would have a quick breakfast this morning, only this one had a new ingredient.


This mix has:

  • 1/3 cup oats
  • 1 Tbsp chia seeds
  • 1/2 cup almond milk
  • 1/4 cup water
  • cinnamon
  • vanilla

Then this morning I added:

  • 2 spoonfuls of yogurt
  • fresh strawberries + raspberries
  • trail mix


Diane from GreensPlus was kind enough to send me some of their Omega3-Chia seeds to try, so today was my first trial! I think I put a little too much in this little dish, but they’re definitely filling! I can’t wait to try them in other ways – I already have some other recipes bookmarked and waiting  🙂

So what is chia seed?

Salvia hispanica, also known as Chia (pronounced chee’ah), is the richest and only unprocessed, whole food source of pure Omega3. A member of the mint family, Chia is native to Central America and has been used traditionally for over 3000 years.Ancient Aztec warriors prized Chia as an endurance–promoting Superfood, eating it in bread just before battle, and drinking it in water before running long distances on foot. Beautiful Mess

What a way to start the day: good food, good company, good music.

I made myself a note yesterday afternoon to mix up some muesli for this morning and I actually did it!


Everything in this was good, but the peaches + raspberries from the market were definitely the highlights.


The base I made last night had:

  • 1/2 cup oats
  • 1/2 cup skim
  • Honduran vanilla
  • cinnamon
  • pinch salt
  • a tiny squeeze of local honey

Then this morning, I stirred in:

  • about 1/2 cup plain yogurt
  • 1/2 peach, chopped
  • handful raspberries + strawberries
  • 2 Tbsp of our new favorite trail mix: cranberries, almonds, dark chocolate


I love bowls of muesli because they’re not supposed to be pretty all the time, yet they still are even when they’re a mess. A beautiful mess of good ingredients.

I made Nick some last night too, so we’re sitting here eating our muesli together and listening to an Avett Brothers cd.

Easy Morning

Good: I got up on time today! Thank goodness I didn’t have to rush around again this morning.

Bad: Blech….I still don’t feel great. I do feel better than last night, but not normal yet.

While I was packing my lunch last night, I also remembered to prep a breakfast for Nick and me today. It makes it so easy to just finish the dish and eat in the morning! The trick is making sure you remember to do the stuff the night before  🙂


Last night, I made one muesli base for me and one for Nick. Mine had:

  • 1/2 cup oats
  • 1/2 cup almond milk
  • cinnamon
  • Honduran vanilla
  • pinch salt


Then for toppings, I cut up 2 nectarines (one for each of us), washed some raspberries and added some sliced almonds and ff plain yogurt to mine.


Mm, mm. I really liked this with the almond milk in the mix! It was my first time trying almond milk in muesli like this.

Of course, I don’t eat it when it’s all pretty and posed like that – I mix it up into a yogurty mess.


I like having half of my breakfast ready and waiting in the fridge – I just have to write myself notes to remember to mix it up  🙂

I’m off to work and will be having either some coffee or hot tea to warm me back up! Love the muesli, don’t love the cold.

I do all the time. I make myself notes and lists all day long of things that I want to remember to do once I get home or the next morning, etc.

Running on Empty

Happy Friday! I hope you are enjoying your day so far today, whether you’re working or not!

I can’t believe I’m just now eating breakfast at 10 am – this is so unlike me  🙂  We’ve had a good morning so far, though.

We got up and went on a 3 mile run this morning, came back, showered, got dressed and I worked on getting breakfast components together while Nick cleaned the shower for me.


I had mixed up some muesli the other night (1 cup wheat flakes, 1 cup skim, 1 cup ff plain yogurt), so I dished that up for us and got out some fruit, nuts, and honey.


I also mixed in a Tbsp of chia seeds to the muesli! I topped mine with some kiwi, strawberries, raspberries, 1 Tbsp pecans, cinnamon, and a tsp of honey.


I really wanted some oatmeal, but after running/showering, I just couldn’t make a hot breakfast.

Nick also made some french press coffee for us!!! Yes, I am that excited about it. We haven’t had “french press quality” coffee in a while but we picked some up yesterday.


Worth the wait, for sure, but I am happy we’re stocked on coffee for a while  🙂

I’m off to start my busy day!

  • Pedicure with a friend at 11
  • Grocery shopping, then home to…
  • Bake dessert
  • Prep dinner/weekend stuff
  • Clean house
  • Finish laundry

Whew – I better get started!

What makes a weekend feel like a “weekend” to you?

I like having breakfast waiting for me in the morning.

Especially when I crash on the couch and sleep amazingly all night long – I think that tart put me in a little sugar coma. I couldn’t even keep my eyes open to watch Diners, Drive-Ins, and Dives at 10! I don’t always remember to prep stuff for breakfast at night, but it does make the mornings easier and a bit less rushed.


Last night, I mixed up a serving of my MixMyGranolamuesli plus a little extra regular oats with a cup of milk for Nick and I to have this morning. After sitting and soaking in the milk, I took it out this morning and stirred in one container of Oikos plain yogurt, then split the mix between the two of us.


I love that the milk softens the oats just enough to not feel raw anymore – they  have such a great, almost fluffy texture.


I topped mine with strawberries, raspberries, blueberries, slivered almonds and some cinnamon.

I thought I would be freezing eating this, but it didn’t make me as cold as having a smoothie in the morning. Maybe this and the breakfast cookie will be my go-to cold breakfasts.
