The Darkness

I love fall, but I am not excited about the dark mornings again.

I didn’t see daylight until almost 8 am today! It didn’t help that it’s also cloudy, but still – I miss the early light already.

My orange breakfast made up for it – tons of fall flavors!

Oatmeal pancake:

  • 1/2 cup oats
  • 1/2 cup egg whites
  • pinch salt
  • cinnamon
  • 1/2 tsp baking powder

Topped with some pumpkin yogurt: greek yogurt mixed with pumpkin puree, cinnamon, and a spoonful of pear butter I got from a friend. It was the perfect topping! Sweet, tart, and spicy.

Nick and I split an orange on the side, and there’s definitely some coffee in my morning plans Winking smile

 

A great way to start a very busy Monday. I’ve got a long to-do list, but it’s all self-inflicted and mostly fun items. Better get to it!

I figured since I’m a finalist in a contest put on by Stonyfield, I should at least eat and share my favorite ways to use their yogurt, so today is day #1.

I still have a ton of yogurt in the fridge so this will also be a great way to make sure I use it all. Plus, after a fun talk with a friend yesterday, all I could think about was a big bowl of yogurt!

Today’s dish?

It’s a little hot. A little cold. A little reminder of Janetha (who is a total sweetheart AND a genius for coming up with this idea).

The oatmeal is a very basic mix:

  • 1/2 cup oats
  • 1 cup water
  • pinch salt
  • cinnamon

No fruit in the oatmeal because I wanted it on top!

Oatmeal, Oikos, Banana, Almond butter. One of my favorite combinations.

You can mix it together or keep the sides separate and enjoy hot bites and cold ones. Meals like this are fun to eat 🙂

Favorite Things

Woohoo, it’s Friday!!!

You know what that means  🙂  Jeans at work and the start of the weekend!

I should have known it was too hot for oatmeal, but I tried it anyways.

My trick to being able to eat it if I’m already hot in the morning is to use frozen berries. They cool down the oatmeal just enough, and the hot oatmeal thaws the berries at the same time.

Today, my bowl had:

  • 1/2 cup oats, 1  cup water, pinch salt
  • cinnamon
  • 1/2 cup or so frozen mixed berries, stirred in at end
  • handful fresh raspberries + blackberries
  • 1 Tbsp sliced almonds

No matter the weather, oatmeal will always be one of my favorite breakfasts.

Well, I don’t know what happened this morning but I could not get out of bed! I guess I turned my alarm off, so I was rushing around this morning just trying to get these made.

I’ve been waiting to make these again. And even though the contest is over, it was still fun deciding on my toppings AND eating them.

Today’s short stack had:

  • 1/2 cup oats
  • 1/2 cup egg whites
  • cinnamon
  • Honduran vanilla
  • 1/2 tsp baking powder

Topped with 1 Tbsp cinnamon raisin pb and some farmer’s market peach.

I almost mixed up a muesli or breakfast cookie last night for this morning, and I guess I should have since I didn’t get up on time.

The good thing about these pancakes is that they don’t take long to make or cook….or eat 🙂  So I was still fine, just a little rushed.

Reunited

It has been way too long, my friend.

It has been over a week – actually close to 2 weeks – since I’ve had oatmeal or oatbran! Way too long in my opinion, but those were not options for breakfast in Honduras.

I was so hot when I got out of the shower that I almost changed my breakfast plans, but I pushed through the heat and am enjoying every bite  🙂

  • 1/2 cup oats, 1 cup water, pinch salt
  • 1/2 banana, sliced
  • 1/4 -1/2 cup frozen mixed berries
  • cinnamon!!!
  • 2 Tbsp of a new trail mix we got: cranberries, raisins, almonds, dark chocolate

One secret I have to eat oatmeal if I really want it but am already hot? I stir in frozen berries. The cold berries cools down the oatmeal juts enough so it’s not super hot, and the oatmeal thaws the  berries enough to eat.

If I could find a way to put dark chocolate in my breakfast every day, I would.

Location, Location

Monday already?

The only good thing about today is that it’s kind of my Thursday or Friday! We haven’t decided yet if we’ll be at work for part of the day tomorrow  – that will depend on how the packing goes tonight and if we get everything together and ready to go.

Monday mornings mean I need a good, hearty breakfast.

We still have a good amount of fruit in the house, so I tried to put a lot in my bowl this morning – mission accomplished, I think  🙂

  • 1/2 cup oats, 1 cup water, pinch salt
  • 1/2 banana, sliced
  • cinnamon
  • 1 Tbsp flax
  • 1/2 white peach
  • 1/2 cup or so blueberries

I think I could eat these farmer’s market peaches every day and be happy. They are perfectly ripe.

On A Roll

What could possibly make Monday morning better?

No work? Yeah, but that’s not happening.

Start of a vacation? Sure, but that’s not happening either.

Pancakes? Oh yeah.

But not just any pancakes – Cinnamon Roll Pancakes for another challenge entry  🙂

I made the oatmeal pancake recipe again this morning but forgot the baking powder! So, they’re not as fluffy as normal, but still tasty  🙂  I guess forgetting an ingredient is what makes it a Monday morning breakfast, right?

  • 1/2 cup oats
  • 1/2 cup egg whites
  • pinch cinnamon
  • pinch salt

Then I topped the pancakes with 1 Tbsp cinnamon raisin pb and “icing” made out of fat free plain yogurt + 1 tsp maple syrup.

Oh yeah, and some fruit.

Breakfast was great – let’s hope it spills over into the workday!

Stocked with Strawberries

We have so many strawberries in our house! I bought about 2-3 times what we normally eat since we had family here this weekend, but we didn’t eat as many as I thought we would. I guess now it’s up to Nick and me to get through them.

It’s a good thing we both love strawberries.

This bowl had:

  • 1/2 cup oats, 1 cup water, pinch salt
  • 1/3 banana, sliced
  • 1/2 -1 cup strawberries, mixed in and on top
  • cinnamon!
  • 1 Tbsp pecan pieces

I love strawberries + pecans together. Adding those to oatmeal just makes it even better  🙂

Plus a small cup of chocolate milk this morning.

Sometimes, you just need something chocolatey in the morning!

I’m kind of excited to have this many strawberries – I’m working up a fun dessert to have tonight that should use some of them, too. Yay for fresh berries!

I’ve been dreaming about this since last night.

What better to start off the last working day of the week than with a fun breakfast?

oatsplitI split one banana in half and laid it in a bowl.

Then I cooked one serving of oatmeal (1/2 cup oats, 1 cup water, pinch salt) and then mixed in some cinnamon.

Then I put the cooked oatmeal on the banana, and added my toppings:

  • 1/2 Tbsp cinnamon raisin pb
  • 1/2 Tbsp slivered almonds
  • strawberries, raspberries
  • 1 tsp honey

I just could not stop taking pictures of this – it looked so pretty! Almost too good to eat  🙂

I love real banana splits, but this is a pretty close rival. I’ll have to do this again when I have some fresh pineapple!

Sweet Start

Isn’t it crazy how one week can be so different from the next?

Last week, I was getting up early to do yoga and this week….I do not want to get out of bed at all!  🙂  I guess I’m resting back up after our fun weekend, but I have been lovin’ that snooze button this week.

So, no yoga this morning, but I am having a good breakfast to jump start my day.

I finally used the very end of my bag of the TJs nuts over rapsberries mix – I guess I was holding out!

It’s a good thing they opened a TJs not far from my parents – I’m thinking I’ll need a trip there the next time I’m home.

This bowl had:

  • 1/2 cup oats, 1 cup water, pinch salt
  • 1/3 banana, sliced
  • handful strawberries and raspberries
  • about 2 Tbsp nuts over raspberries mix
  • 1 tsp mini chocolate chips since there was only one left in the mix!

I’m off for another busy day at work, especially this morning. I have to finalize those packets and get them mailed out first thing – I think I got most of it put together yesterday, so I should just have to check through each packet to make sure it’s complete and then get them in the mail.
