Sucked In

Ah! I think the tv has it out for me today.

I got sucked into watching The Notebook this afternoon and now I’m watching National Treasure until Iron Chef comes on. I love these movies! Good thing all the things I needed to do were inside today  🙂  I’ve got the last load of laundry in the dryer and waiting for me, so I’m going to fold those as soon as I’m done with this post.

While working on laundry / watching my sap fest this afternoon, I did have my other slice of cake that Jen and Ross left with us last night.


This cake is so good! The peanut butter in the icing makes it so rich and gives it such a deep flavor.

And yes, I did just eat it right out of the tupperware  🙂  Cake makes for a good snack, especially with a cup of milk.

After that it was more movies + laundry, laundry, laundry….until dinner! We actually ate later than we normally do since I was working on stuff and Nick was stripping / staining some dresser drawers outside. I knew he wouldn’t want to come in and eat until he was done, so I held off getting dinner together until he was close.


I made myself a pasta bowl with some of the leftover rainbow chard / white bean pasta and some roasted broccoli.



I love making pasta bowls. I just put a layer of some veggie (spinach, greens, broccoli, green beans, etc) and then layer on your pasta dish! It’s a great way to get more veggies in your pasta if you don’t want to cook them into the dish OR a good way to use up leftover veggies, too. Once you mix everything up, it just tastes even better!

Okay, I made a point to type this out earlier this morning so I wouldn’t forget to post the “recipe” today.

I love this dish and how it came out! Since we had a potluck at church on Sunday, I wanted something that would be easy to take and heat up. I kept thinking of doing veggie enchiladas, but I would have no way to heat up a huge pan of enchiladas once we were there. And I didn’t want to have to roll up tons of enchiladas the night before either.

So Veggie Enchilada Pasta was born!


Sorry I don’t have the actual amounts – I just threw things in the pot until it looked like I had enough for the potluck + some for us this week. Adjust for your servings, but I don’t think anything can go wrong with this recipe.

  • Zucchini, diced
  • Yellow squash, diced
  • Black beans, drained/rinsed
  • Pinto beans, drained/rinsed
  • Fresh or frozen corn
  • Garlic
  • Scallions
  • Big can of enchilada sauce
  • Crushed tomatoes (canned or good fresh ones if you have some)
  • Can of rotel
  • Ancho chili powder
  • Cumin
  • cayenne
  • Whole wheat pasta (shape of your choice)
  • Water
  1. In large pot, sauté zucchini and squash in a little oil, salt and pepper until softened a bit. Take out of pan and set aside.
  2. Add scallions and garlic to pot and let them cook for a few minutes. Add in the beans, tomatoes/rotel, spices and enchilada sauce. Bring to a boil and let simmer for 5-10 minutes to let the flavors mix together.
  3. Add in pasta (I used a whole bag of whole wheat noodles – I guess a pound?) and more water, if needed. Let the pasta cook in the pot.
  4. Once the pasta is cooked, stir in the corn and the zucchini and squash. I waited until the end to add the squash back in so it wouldn’t get too soggy.


This stuff reheats really well. Perfect for easy lunches during the week!

For lunch today, I had another serving of this pasta and more leftover roasted broccoli from dinner the other night.



I can guarantee it tastes better than it looks  🙂  I was honestly just trying to keep my red-stained gladware container out of the shot!

I really like leftovers, if you can’t tell. I also don’t like to waste food, but I never have to worry about that as long as the food is good the first time around!

Mini Migraine

Uh oh – I feel one coming! Just during lunch a small headache is starting to pop up. That just will not do. Any get rid of headache fast tips?

Work was busy this morning, and I actually got hungry around 11:30, but I didn’t want to ruin my lunch so I chugged some water to hold out until Nick got here right around noon.


I had some of the enchilada pasta I made this weekend – so good! I’ll post the recipe soon, promise!

Plus some leftover roasted broccoli from last night.


I’m hoping this food, water, and caffeine from the coffee will kick in and get rid of this headache, but we’ll see.

I think everything is going ahead with the truck! The guy is picking it up tonight, so just a few last things to do.

I also finished Animal, Vegetable, Miracle last night – LOVED it. I want a farm. But now I need new books  🙂  I already have a list going, but I wanted to see what some of you are reading or have read lately.

Good book suggestions? I like just about anything. I’m itching to get into another book already – I missed reading on the way to work!

Happy Thursday! I can’t believe tomorrow is Friday – because of that telework on Monday, my week has been so off! I kept thinking that today was Wednesday at work, but tonight feels more like a Friday night. I’m so confused. At least I know tomorrow is jean day! Is it sad that I get that excited about being able to wear jeans to work? I don’t think so.

I’m so glad you’re enjoying the Honduras recap posts. I’m having tons of fun going through all the pictures again, but I have so many! It’s so hard to pick the ones to post when you have almost 600 pictures to choose from.

This morning, we had a conflict resolution/harassment workshop to attend, which was actually pretty good. It was only about 2 hours long and the case studies we talked about were interesting – I just didn’t think some of the things could be (or would be) considered harrassment, but it’s nice to know what options are in place for the employees here.

Lunch was a HUGE salad!


  • romaine
  • spinach
  • bean/pepper/onion/corn salad
  • beer butt chicken
  • peach salsa
  • avocado dressing (mix of avocado, lemon juice, salt, garlic just blended up until creamy)

and some of these new snacks!


I got these free samples of Somersaults Snacks last week and tried the S.S.Sea Salt flavor today (love that name).


I liked these – they reminded me of those sesame breadsticks you could always get at salads bars. Remember those?

I have one other flavor to try and I’m excited to open them up. I loved the salty flavor and crunch of these snacks – they went really well with my salad.

We ate lunch pretty quickly so we could go walk around Books a Million at lunch. I love just walking around bookstores and looking through all the books and magazines I want. I don’t buy books very often  – our bookshelves are pretty full already – but I like seeing what’s new and looking through tons of cookbooks, obviously.

I think Nick and are both on the mend in regards to strange stomach stuff – it’s still been rumbly a bit in the morning and in the afternoon (I guess when the meds are kind of wearing off), but nothing like it was a few days ago. I’m hoping tomorrow is the last weird day and that we’ll be totally back to normal by the weekend! We should have some fun plans, so I just want to feel good.

While working this afternoon, I had one of my favorite snacks:


It’s been a very long time since I’ve had Fage. Since Oikos has been on sale some lately and I’ve had coupons, I just haven’t bought Fage because it’s more expensive and NEVER on sale. Until this past weekend. And since it was, I got Nick a few of the ones with the fruit and honey and got me one plain one.

I topped it with a Kashi Blackberry Graham cereal bar – so good. This was the perfect way to use this bar. It was already kind of broken up in the package since it was one that traveled with us to Honduras, so I just broke it up into smaller pieces and didn’t have to worry about making a mess trying to eat it like normal. Great combo!

I actually have a bunch of random stuff to work on tonight so I’m glad dinner was quick + easy. Since we went out last night, I just cooked more pasta, heated up the leftover turkey/portobello sauce, and roasted some broccoli for us.


I love making pasta bowls! I can get in there and make a mess and have all the flavors at once.


In this bowl, I layered:

  • roasted broccoli
  • whole wheat pasta
  • turkey/portobello/garden fresh tomato sauce
  • 2 slices of garlic  bread

I loved the bites with sauce + pasta + broccoli. Roasted veggies have such great flavor.

And can I just spend a minute on these beauties?


My baking project last night was making Nicole’s recipe for Chocoloate Chip Cookie Topped Brownies, and I’m ridiculously happy I made them.


Um, these are amazing! And healthy! And vegan to boot! Of course, I guess mine aren’t since I used regular chocolate chips, but both layers of this dessert are awesome.

Okay, well I have a feeling I’m going to look like this soon – maybe with some pb or ab instead of hunny though  🙂


Both Nick and I are having crazy tummy stuff again! I was feeling fine today until around 4 pm, and then it was like my body just wanted to blow up like a balloon, get rumbly and crampy and strange, and make me feel like Pooh.

I had plans of posting my lunch pics at lunchtime, but I left my cord at home! I’ve already put it in my purse for tomorrow – no worries.

I packed a veggie burger on an arnold thin with some ketchup and mustard – pretty plain, but it was good. I meant to pack a slice of cheese and didn’t realize that I forgot it until I was putting this together at lunch.


Some bean salad I made yesterday, which totally made me think of Rose 🙂 Did you see her double bean creation today? I loved it.


I took a mixed can of beans (kidney, pinto, black) and added some corn, diced red onion, leftover grilled peppers from this weekend, salt, and garlic powder. Easy! And filling.

Plus some broccoli.


This afternoon was good and busy. Lots of letters to send and trying to find out more about teleworking in the future, which was exciting. We’ll see what happens!

I was really excited for my snack today. I finally found this yogurt at Martin’s near Nick’s parents and brought it home with me to try.

Since I usually eat plain greek yogurt, this did have much more sugar than I’m used to having in yogurt, but it was totally worth it.

When you open it up, it just looks like vanilla or plain yogurt –


But then, if you just dig down a little, you get to this chocolately layer on the bottom that is amazing!


I mixed most of it together, but left a little chocolate at the bottom  🙂  This was probably one of the best flavored yogurts I’ve ever had, and that’s good considering I normally don’t like vanilla yogurt at all. I loved the combination of the vanilla + chocolate, and it was the perfect balance of sweet + tart. I hope they start carrying this flavor here!! I already want it again.

I also had a small handful of cherries with my yogurt


I did make a good dinner, even though my stomach was flip floppin’ all around.

We had those leftover grilled turkey sausages from this weekend, so I chopped those up along with some portobello mushrooms and made a sauce for some pasta. The sauce is a weird color – Nick cooked down a bunch of our tomatoes the other day to use for this sauce + fresh salsa and since our tomatoes are red/yellow/green, the sauce isn’t the normal “pasta sauce” color. But it was tasty!


We had the sauce over some whole wheat pasta and roasted asparagus.


The meal was good, but my tummy is soooooo not normal or good right now.

I took some pepto so I’m hoping it will kick in soon.

Plans for tonight = pajamas, taking my contacts out and switching to glasses, and reading

times 2!

1. Thank Goodness It’s Friday, right?

I had an eye appointment this morning and it had been 3 years since the last time I went – oops! I got some new contacts ordered AND bought a new pair of frames/lenses. The glasses I have now are a cheap $8 pair of sunglass frames that I popped the lenses out of and had prescription lenses put in and I’ve had them for about 7 years, so it was time. I needed them to have the right prescription anyways and I got a really cute pair. I should be picking them up in the morning  🙂

Today was crazy busy at work. I had so many emails to work through, plus we’re trying to set up working remotely from home to see how that will work, so I was working on a bunch of stuff today. It felt like a full day even though I was only there about 5 hours. I am glad I only had one day of week this week and now the weekend – that will make getting back into the office easier after the trip.

We didn’t eat all the ravioli last night, so I brought that with me for lunch.


I also brought a small salad with the leftover romaine I cut up last night, plus 1/2 of a tomato from our garden.


and a nice, crispy apple.


Hooray for produce  🙂  I wonder how long this excitement will last! I know I’m already psyched about going to the market and grocery store tomorrow.

I got pretty hungry at work this afternoon, but I was working on everything so much that I never stopped to have a snack. Nick and I ended up running around after work checking out vacuums since ours broke, so I had this in between stores.


Yup, I finally found the Coconut Cream Pie LARA bar right before we left for our trip. I’ve been looking for this flavor since I saw it on a blog MONTHS ago!


I realize that I haven’t tried all of their flavors yet, but this one rocked! I loved, loved, loved all the shredded coconut in the bar. It gave it such a great texture. I will definitely buy more of these. I hope they keep them stocked around here now that I finally found them.

In vacuum news, I think we found the one we’re going to get – Nick was looking up reviews while I was getting dinner ready, so we should hopefully have a new one this weekend.

2. Thank Goodness I Freeze…


I had no plans for dinner tonight. I was hoping we would have had enough ravioli leftover for dinner tonight, but the package only had a little over 2 servings and we had barely stretched it to 3 servings.

What to do when grocery shopping won’t happen until the next day and you don’t want to eat out?

Look in your freezer.

I found a bag with 2 servings of my Super Bowl Chili Mac, so I heated that up in a pot on the stove and roasted some broccoli in the oven.


I love roasted broccoli. I love that the edges get kind of crispy.


I also love having stuff in the freezer for when I have no plans and no food! At least we still had a homemade meal.

I’ve got one load of laundry going and still have a full hamper. I have a feeling this rainy weekend will be filled with laundry  🙂

I usually do and love my early Saturday morning shopping trips, but there are some weeks that I just don’t feel like planning out meals or making my list.

On The Road

Okay, so we’re still at home  🙂  BUT we’re all packed and ready to get on the road. I think I have everyting?

  • bathroom stuff: deodorant, shampoo, razor, face wash, toothpaste/brush, comb, brush
  • contacts/glasses
  • hair clips, ponytail holders, headbands
  • 1 pair of jeans
  • pants for worksite
  • skirts + dress for church on Sunday, plus tops
  • 1 pair flip flops, tennis shoes for workdays
  • pajamas
  • raincoat
  • hat
  • socks, sports bras, etc
  • travel hair dryer
  • dirty clothes bag
  • Plus everything else downstairs: sunscreen, bug spray, camelpaks, water bottles, food

That sounds like enough, right? 🙂  I know I’ll probably forget something – I just hope it’s nothing major.

We cleaned out the fridge today for lunch. Nick ate his last 2 slices of pizza and a salad, and I ate the last of the leftovers.


I had the last of the thai-sauced pasta dish, a boatload of broccoli, and some golden jubilee + mr. stripey tomato slices from our garden.


I think I’m good on product for today – this was like 2.5 cups of so of broccoli, but that’s good.

The one thing I’m not sure of on this trip is how many vegetables I’ll be able to get in. Since I’m used to having a good amount each day, that will be the biggest difference. I wish I would have thought to order some of the single serving packs of amazing grass to take with me! Too late now, but it’ll be okay.

I’m about to have this small glass of chocolate milk to finish off my milk, and then I think we’re hitting the road! All that’s left is to get everything into the car and say a sad goodbye to Roxy.


We hate leaving her for a week, but our neighbors are watching her and she’s outside most of the time anyways. She’s always happy when we get home AND usually 5 lbs heavier  🙂  But we do miss her a lot.

I don’t know what it is, but I always want to listen to our Hot, Hot Heat cd on trips. Such good travel music. And Incubus, Limbeck, Ben Harper, G. Love….feel good music.

Rushin’ Around

Ah!!! Today has been just going and going, non stop.

I got everything done at work, finished all the lists I was working on, AND thankfully remembered to call and have a new EpiPen sent to my pharmacy. My other one was expired, and I will definitely need that if I get stung by a bee.

I packed a snack for this afternoon and never even took it out of the fridge. I was hungry alright…I was just so busy this afternoon that I didn’t stop for a minute to actually get it out. Oh well – at least I got everything done!

Dinner was super quick and easy, thanks to the leftovers from last night.


I had a serving of the leftover pasta along with some extra broccoli and a Mr. Stripey tomato from our garden!


I love having fresh tomatoes – I hope we don’t miss too many while we’re gone!


Extra cilantro is always a good thing.

I’ve had a lot of broccoli and tomatoes today! Good thing I like them, I guess.

We ran more errands after work to get me some leather gloves and a cheap/smaller wallet for the trip. I think that’s it – for now  🙂 If we have to buy anything more, we won’t have any more room!

I’ve been working on laying out my clothes and all our supplies so we can pack everything up in the morning and get on our way. And now I’m ready for pajamas and a little popcorn snack.

Goodbye Weekend

Why do the weekends go by so fast?!?

Thank you all for your notes and comments on my earlier post. I know that everyone has a story to tell, and I  needed to do that post more for me than anything else. Everyone will deal with this in some respect in their lives, and it’s so hard to actually put into words how you feel and what you think and how in the world you’re supposed to keep going without certain people in our lives. But that journey is a huge part of how we  grow and learn what we’re made of. Anyways, thank you again. I really do appreciate every one of them.

So I guess I have a whole day to catch up on!

Breakfast was our normal Sunday breakfast – not anything new around here  🙂


2 over easy eggs + grits. I haven’t had grits in a while since I got on my oatbran kick, and I think I like the oatbran under my eggs better! I kind of missed them this morning.


Plus a white peach from the farmer’s market, blackberries, and some new bacon I bought this weekend. It’s actually called “Sunday Bacon” – fitting, I thought.  This peach was good – we have one more market peach to eat before we leave, so we’ll be spittling that one in the next day or two.

Nick also made coffee this morning, so I had a cup of that.

Our lunch plans changed after church today – we have leftover pizza and we were planning on coming back for that, but a friend at church ended up taking us out for lunch today instead. Since I planned on coming home for lunch, I didn’t have my camera with me, but I had a bean/onion/mushroom quesadilla + guacamole salad at the mexican place.It was a fun lunch, and I’m glad we got to spend some time with them. I guess that leaves the pizza for tomorrow! One less thing to do tonight when getting ready for work tomorrow.

We got home and got started on the stuff that needed to get finished today.

Nick went outside to cut the grass, and I put the last load of laundry in to wash.

I got pretty hungry this afternoon while laundering and cleaning, so I had a bowl of cereal.


I had a serving of the Ezekiel 4:9 Original cereal with some milk, a sliced banana, cinnamon and a little drizzle of honey.

Then I got back to my commercial cleaning.

What is commercial cleaning, you ask?

Well….that’s what I call my cleaning when I get sucked into something on tv  🙂

Today, it was Hokie Nation, this documentary some people made about the football team and the fans.

So, in commercial cleaning, I sit and watch while the show is on and then I do as much as possible during each commercial break so I can sit back down for a few minutes when it comes back on. It works pretty well, actually….most of the time.

After I finished laundry and cleaning and Nick came in from mowing and weedeating, I got started on a pretty easy dinner.

I’m trying to use up the stuff in the fridge, which means it was a perfect night for a one pot dish.


I made a Thai-sauced pasta dish tonight, and it was so good and easy.


I cooked up about 4 servings of whole wheat pasta for the dish, and while that was cooking, I sauteed 1/2 a leftover red pepper, about 1 cup of shredded carrots, and 2 scallions.

I also diced up the leftover cilantro chicken from the other night and got out some leftover broccoli.

Once the veggies were softened up, I added a sauce to the pan:

  • 2 Tbsp or so soy sauce
  • 1 Tbsp fish sauce
  • garlic
  • 1 Tbsp PB2 mixed with water
  • 1 tsp chile garlic pasta (hot!)

I poured the sauce into the veggies, then added 1 Tbsp of cornstarch dissolved in water and let the sauce thicken a bit.

Add the pasta to the veggie/sauce mixture, then stir in the chicken and broccoli to heat them up.

Right before serving, toss in a big handful of cilantro and a couple squeezes of fresh lime juice.


I wish I would have had some peanuts to sprinkle on top, but it was still really good. I think I would actually add more PB2 to the sauce next time.

The good thing is that this made a good amount, so that takes care of dinner tomorrow.

I’ve got to go get the boy some cookies – he got stung by a bunch of yellow jackets while he was mowing and is asking for a treat. Considering he has an ice-pack out for the bites, I think he deserves something.

Busy Bran

Today has been busy, busy.

Busy at work, and busy trying to get last minute stuff done before leaving for Honduras a week from today! Ah!

I have a monster list going of everything we need to pack and things we need to buy this weekend before leaving. Let’s just the say the list keeps getting longer and I’m getting a little anxious about making sure we have everything!

Any guesses what lunch was?



Yup.  And good ones!


Leftover pasta pie + roasted asparagus. Am I the only one that thinks pasta gets better after sitting at least one night? It always tastes better the second time to me – I guess because the sauce gets to really soak into the pasta.


And more cantaloupe + a few berries

I’ve got a full afternoon of work, then a chiropractor appointment, a trip to the pharmacy for some meds for our trip, then home for dinner.
