On A Roll

What could possibly make Monday morning better?

No work? Yeah, but that’s not happening.

Start of a vacation? Sure, but that’s not happening either.

Pancakes? Oh yeah.

But not just any pancakes – Cinnamon Roll Pancakes for another challenge entry  🙂

I made the oatmeal pancake recipe again this morning but forgot the baking powder! So, they’re not as fluffy as normal, but still tasty  🙂  I guess forgetting an ingredient is what makes it a Monday morning breakfast, right?

  • 1/2 cup oats
  • 1/2 cup egg whites
  • pinch cinnamon
  • pinch salt

Then I topped the pancakes with 1 Tbsp cinnamon raisin pb and “icing” made out of fat free plain yogurt + 1 tsp maple syrup.

Oh yeah, and some fruit.

Breakfast was great – let’s hope it spills over into the workday!

Have you made your pancake entry yet? What are you waiting for?!?  🙂

So, I think I have a problem.

All I can think about are new pancake creations to try  🙂 That’s right, Katie – I have another one to add to the contest!

I dreamt this one up yesterday and decided to make it happen.

Who wants S’mores Pancakes?

I know I did this morning.

I made the same oatmeal pancake recipe (thanks to Kath) with:

  • 1/2 cup oats
  • 1/2 cup egg whites
  • 1/2 tsp baking powder
  • pinch salt
  • 1/2 tsp vanilla
  • pinch cinnamon…or a little more than a pinch.
  • 1/2 Tbsp graham cracker crumbs – the secret s’more ingredient

I cooked them in smaller “cakes” so I could make a stack again.

After they were cooked, I slathered each pancake with 1/2 Tbsp dark chocolate dreams peanut butter (using 1 Tbsp total), stacked them up and topped with some sliced banana and another small sprinkling of graham cracker crumbs. Really, just a pinch.

This breakfast made me wish I was sitting around a bonfire – please try this combination!

It was so comforting, even without having marshmallows. I’m sure it would be great with them, but I didn’t have any on hand and the banana flavor went amazingly well with the graham cracker/chocolate pb/cinnamon flavors. Great way to start any day of the week.

I also had a small dish of strawberries since we still have a good amount, plus a cup of milk

Make sure to get your guest post to me by July 15th if you’re interested! We’re still trying to figure out what to do about the trip – I’m hoping and praying that the situation will work itself out so we don’t have to make the decision, but I’ll guess we’ll see what happens in the next week and a half.

What would be YOUR dream pancakes?

Pretty Pasta

I had so much good food today! Loved breakfast, lunch was great, and that theme continued on throughout the day, which always makes me happy.

Work was super busy again today – I think tomorrow may be a bit slower, but we’ll see. Knowing me, it will be crazy just because it’s the last work day of the week!

I packed a snack today that I haven’t had in a while –

1 Tbsp crunchy pb + 1 tsp fig jam on an Arnold Thin. Maybe the perfect snack? I love this fig jam and need to find 100 more things to use it on.

This was just enough to fuel me through a hectic last hour of work (which also included playing with a coworker’s friend’s new baby!) and an appointment with the chiropractor.

Nick had plans to go out on the river tonight since I had my chiropractor appointment, so I got that done and then came home to do a 20 minute Power Yoga download and my SGBC Day#1 stuff!

What a great 30 minute workout! I was sweatin’ at the end of both of these. It was also my first time ever doing the “mountain climber” move and it was crazy! My heart was pumping so much at the end of each set – I’m glad I”m doing this boot camp. I’m excited to see what changes will happen in the next month!

Dinner tonight was a tried and true meal that we both love, and I’ve made it many times.

I use the modified version (here) of this Giada recipe for Turkey Meatballs and Penne. We love this recipe so much that I’ve never actually tried making the meatballs with beef – the turkey is wonderful in this recipe.

I just made a quick sauce with

  • 1 28 oz. can of crushed tomatoes
  • garlic powder
  • onion flakes
  • crushed red pepper
  • italian seasoning
  • parsley
  • oregano
  • salt
  • pepper

I let the sauce simmer and baked the meatballs for 25 minutes at 350 (instead of pan searing them) while the pasta cooked.

Quick steam some broccoli in the microwave and you get a nice little steambath when you take that out and uncover the dish, right?

Free facial, even if it smells like broccoli. I take what I can get.

This post would have been done earlier, but Nick and I just got back from playing with our neighbor’s new puppies  🙂 They are so cute! We also got to see the 7 little chicks he has flying around. Baby animals just make me happy – they’re so awkward and funny and way too cute for their own good.

In fashion news (?), I don’t know what has been up with me lately, but I wore a skirt or dress every day last week except Friday and it’s happening again! Maybe it’s the weather, maybe I just feel like actually looking like a girl at work  🙂  Who knows, but I am loving finding all my dresses again. I honestly forgot I had this one!

I found this dress at JCPenney (swanky, I know) for like $12 a few summers ago and fell in love with it. I love the belt, but my favorite part is how the shoulders cut in. I also feel a little like a Stepford Wife, but I’m okay with that.

Plus some fabulous brown wedges my mom gave me?

Love it. I think I need to invest in more skirts and dresses! I just get in the mood to wear them once the weather is nicer – it’s really hard for me dress up like this in the winter because I’m always so cold, so I am embracing this while I can  🙂

Good thing I just got 2 new dresses for my birthday! Now what am I wearing tomorrow…

Monday Madness

Well, we mad it home safely.  Nick and his mom finished working on the spray skirt around 4:30 yesterday, so we packed up the truck and got on the road. We got home a little before 8 last night, unpacked the truck, and I headed to the grocery store to get the rest of the stuff I needed.

I am glad that it’s light for so long, because getting home later in the evening on Sunday and having to get ready for work Monday morning is never fun. We got all our bags unpacked and most of the stuff put away – I have a fun night ahead of laundry, cooking, cleaning  🙂

Nick wanted a frozen pizza last night for dinner + lunch leftovers today, so I bought him one but when I opened it at home, the cheese on the frozen pizza was moldy! It grossed me out.

We had some of the ham/corn salad topping from the other night, so we both had salads last night at 9:15 or so for dinner. I got in my pajamas, watched a little Iron Chef and then headed to bed.

And now it’s Monday. Our Monday mornings are always a little more rushed than other days because the trash comes today so we’re shoving that out the door while trying to pack up our stuff for work and everything else.

Monday morning oatmeal seems to have special powers, though.

How can your day be anything but good when you start off with this?

  • 1/2 cup oats, 1 cup water, pinch salt
  • 1/2 banana, sliced
  • 1/4 cup frozen mixed berries to cool it down
  • cinnamon
  • handful blueberries/strawberries
  • 1 Tbsp cinnamon raisin pb

Do you unpack right when you get home from a trip or later?

All Growed Up

Are there any foods that just make you feel like a kid again when you have them?

One of mine is chocolate milk. I love chocolate milk, and don’t have it nearly enough. Especially since it just makes me happy.

Surprisingly, oatmeal is not one of those foods. I actually did not like oatmeal when I was younger – I don’t know what it was, but I never ate it until I was in college. Can you believe that? I’m so glad I got over that.

  • 1/2 cup oats, 1 cup water, pinch salt
  • 1/2 banana, sliced
  • handful blueberries
  • cinnamon, and more cinnamon
  • 1 Tbsp cinnamon raisin pb

This peanut butter is awesome – I think I may like it a little better than the chocolate one, which is crazy! Now if I could just find the mighty maple and white chocolate….

I also had a big glass of icy cold chocolate milk this morning – I was planning on having this no matter what I actually had for breakfast. It hit the spot.

Yes, I like my chocolate milk verrrrry chocolate-y  🙂  If I’m going to have it, I want it to taste like chocolate milk!

What are your “make you feel like a kid again” foods/drinks?

I was so excited for my lunch – I don’t know why, but I’ve been looking forward to it since I packed it this morning.

I finally opened my jar of Cinnamon Raisin pb today, so lunch had to include that:

I put about 1 Tbsp on each slice of bread this morning, topped it with half a sliced banana, and just waited to dig in.

This was so good. I loved all the cinnamon in the pb, and with the banana? I’m definitely going to have this again.

To get some veggies and some more fruit, I had a Super Fruity Salad, which I think is a cousin to the HJ? She is big and beautiful, that’s all I know.

This had:

  • romaine
  • broccoli slaw
  • 1 tomato
  • random 1/2 cup of fruit (kiwi, berries, peach, 1 raspberry)
  • dressing made up of a little olive oil (less than a tsp, probably) raspberry vinegar, and dijon

I used to think pineapple was my favorite salad fruit, but the peach on this was so good! I can’t wait to get super fresh ones from the market this summer.

Apparently, there is a fun little tag game going around and I was tagged by Coco! Here goes  🙂

1. Once you are tagged post a picture of where you blog.
2. Feel free to tell us a little about your space, or explain certain items in more detail. Or not.
3. Link back to the original post.

Friday Rules!

TGIF, right? I feel like I’ve been waiting forever for Friday to get here!

First things first – I just wanted to say Hi to all the new readers/commenters lately! I’ve been trying to get back to comments and visit your blogs as well, but I just wanted to say Hi! Thanks for visiting and reading and commenting!

Friday wouldn’t be Friday without a fun breakfast, right?  That’s what I think.

I had one dark chocolate reese cup left that Nick saved for me, so I knew I was saving it to do this again.

  • 1/2 cup oats, 1 cup water, pinch salt
  • 1/2 banana, sliced
  • 3-4 strawberries, sliced (nowhere NEAR as good as the ones yesterday)  😦
  • 4 blackberries
  • cinnamon
  • 1 Tbsp crunchy pb
  • 1 dark chocolate reese cup

Seriously – I don’t know what could be better on a Friday morning. It’s the start of the weekend, I’m having melty pb and chocolate on my oatmeal, and I’m in jeans and a super cute top today! I even have on makeup! I wish every day could be Friday.

So, I’m running in my first ever 10K race that is also a trail run tomorrow morning. I’m super excited, but since I’ve only done a couple 5Ks (none of which were trail runs), I know it will be different than the races I have done.

Have you ever done a trail run and/or 10K? Any tips or advice?

I do have my race outfit picked out, which is one of the most important things  🙂

I’m a Winner!

I am soooooo glad it’s Thursday and that the day is almost over. Today has been so long at work, more emails keep coming in – ah – it’s nonstop!!! I’m ready for a weekend.

The Hokie game last night went into double over time, so Nick and I missed most of LOST last night. I’m so glad ABC has the full episodes online! We watched it at lunch today- no eating outside since it’s cloudy/rainy today  😦

Lunch was pretty good! Some more chicken barley chili

A wrap with some fat free cheese and hot sauce!

Some celery with a little ranch for dipping

and some cantaloupe / strawberries

This batch of strawberries I got the other night are awesome!  They’re perfectly ripe and red inside  🙂

I found out today that I tied for 3rd place in the Great Peanut Butter Exhibition #5!!!

Since the contest is over, I guess I can reveal the recipe I sent in! Man, was it good  🙂

Cinna-Spiced Chicken PB Wrap

pbwrapNow, I did use leftover chicken for this, but you could definitely do this any day of the week!

  • Wrap/tortilla of choice
  • crunchy peanut butter
  • about 1/4 – 1/2 cup mashed sweet potato
  • cinnamon
  • cayenne
  • salt
  • bbq chicken (or tofu, or just regular chicken and use bbq sauce, too)
  • sliced apple

Spread a healthy amount (i.e., however much you want) of peanut butter on wrap.

Spread sweet potato on top of pb.

Sprinkle with salt, cinnamon and cayenne.

Top with chicken/tofu/whatever protein you want. I used leftover grilled bbq chicken.

Top with some thin apple slices.

Wrap, heat, and eat!

Thanks so much Peanut Butter Boy for a great contest! I can’t wait to try some of the other recipes that were entered in the contest  🙂

Thanks to everyone for your comments and support for my mom. I talked to her at lunch and they’ve done the stress test, so they’re just waiting for the results. She was watching Barefoot Contessa and eating a not-so-yummy hospital lunch. All your comments meant a lot to me!

Enjoy your day!

Just 2 more hours, 2 more hours….

No Heat for Us!

Well, the maintenance guy came out and looked at our heater, and our motor has locked up, which is what caused the burning smell. We have to get a new motor, which won’t be here until Monday or Tuesday of next week – thank goodness we have a propane heater upstairs and a few of those electric heaters!

At least the weather is supp0sed to be pretty nice the next few days (in the 50s and 60s), so I’m hoping it won’t be too bad. You may see a few more hot drinks in the next few days on here  🙂

Starting with some green tea!  I was a little chilly this morning, so I made a cup of this while waiting for the heater man and working on laundry.

This was really good – I like citrus flavored green tea, and it did a good job warming me up!

For lunch, I had a taco salad, aka big bowl of veggies!

This bowl had:

  • between 1/3 – 1/2 cup fat free refried beans
  • 1/2 chicken breast, diced (it’s in there, I promise! You just can’t see it)
  • 2 cups chopped romaine
  • 1 roma tomato, diced
  • 1/4 avocado, diced
  • lime juice
  • 1 tsp. olive oil

I heated the beans and chicken in the bottom of the bowl, then added the rest of the veggies cold and drizzled on the juice and oil.

Since we’re home for the rest of the day, we decided we’re going to go running this afternoon.

So – I needed some fuel  🙂

Thanks to Jenna’s pictures of this, I finally made one for myself!  Now I know why she has it so often –  it is so good!

This snack starts with this beauty:

Add a sliced and halved banana, and you’ve got a powerful snack   🙂

I think we’re going to run a few errands, go for a run, shower, go to dinner, and then head out for a church group thing tonight.

Dinner recap might not be until later – you’ve seen this meal before, but I sure am looking forward to it today!!!  🙂

Woohoo – it’s the weekend!
