Fancy Sandwich

So, today I’m having something totally new AND something that I just don’t normally have anyways.

A sandwich!

I’m not sure why I don’t have sandwiches more often.

I really like them. I think I just usually have so many other leftovers in the fridge that sandwiches are often the last things I think about for lunch.

Today was different, though.

I found this great sounding sandwich idea in an old SELF magazine article last weekend and decided I needed to try it.

This sandwich was;

  • 2 slices of Alvarado St. Bakery bread, which needs to get here soon!
  • 2 slices of Applegate Farms Turkey – first time having this, and it’s awesome
  • 1 Laughing Cow wedge
  • 1/2 Tbsp fig jam
  • fresh, local greens

The combo of the cheese + jam plus the turkey is so good! I’m glad I tried it.

I also had a simple salad on the side with some more greens and the rest of the tomato I had yesterday.

Very good lunch, but light. I have a few snacks waiting for me for this afternoon  🙂

Dough-y Lunch

I guess I’m on a bread kick today  🙂

I brought lunch today, but then remembered how long it had been sitting in the fridge and decided not to chance it. I hate wasting food, but I really didn’t want to risk getting sick when we still have a bit of Honduran weirdness coursing through our bodies.

So off to lunch it was! it was quick + to go since I have to eat at my desk today.

We went to The Easy Chair today and they had their hummus! I ordered their hummus + veg on focaccia bread. It has tomato, lettuce, red onion, carrots, cucumber (we’ll see if I leave these on) and hummus. Yum.

I also got their unsweet blueberry iced tea

Their iced tea flavors are always good. This one and their ginger peach are my favorites.

I also had the sides I brought with my lunch:

2 of our golden jubilee tomatoes that needed to be eaten and some raw zucchini from the market. Look how stripey it is! I brought MORE guac to dip  🙂  This will be my first time ever trying raw zucchini…wish me luck. It just tasted so good cooked the other night, and I knew I needed to eat it soon since I already sliced it up.

Back to work for me! We have to leave a little early for Nick’s dr. appointment, which is why I’m working + eating at the same time.

I’m so happy it’s Friday!!! It doesn’t feel like it to me, but I am wearing jeans and I had a fun breakfast + awesome Honduran coffee so that’s a good way to start the day.

It seems I decided to have veggies for breakfast and fruit with lunch, which is the opposite of what I normally do.

But it was good!

I made a stacked bowl for breakfast this morning and it was super tasty.

  • grits
  • bean/corn/pepper/onion salad mixed with some of our fresh cooked tomatoes = instant salsa
  • 2 eggs that I cooked too long  😦
  • fresh Miami avocado!

The only bad thing? I totally overcooked my eggs and they weren’t runny at all! It was still a good combination, though.

Lunch had to be easy and quick today. I had a follow-up eye appointment, so I ate this lunch in stages.

This morning, I put together a strawberry + almond butter sandwich on some alvarado st. bakery bread.

Some all natural pear crisps – they’re like air! So light and good.

I have a feeling some snacks will be happening this afternoon…my stomach is not satisfied.

So much to post, so little time  🙂

Today was pretty good, except for me almost passing out at the doctor’s office – oops! I am not good with needles or other not-fun things and I just got really hot today and felt like I was going to pass out. Thank goodness I didn’t, but that is never fun. The good thing is my stomach is doing a bit better! The pills are working and I’m hoping Nick and I will both be back to normal by the end of the week.

So, I have almost an entire’s day worth of food to post!

Before my doctor’s appointment, I had one of the blueberry chia muffins.

Still good, but I think I like them better heated up a little bit. I love the flavor, though.

Went to the doctor, paid $35 and left with a cup of water and a lollipip to get my sugar back up? I didn’t eat it – it was a gross flavor dum-dum and not my favorite (cream soda dum-dums are the best!)

Lunch was kind of random and thrown together, but it tasted good! I wasn’t sure how this would be when I packed everything up, but I liked the combination.

I brought 2 slices of my flax seed bread and brought a bunch of toppings:

  • 1 wedge laughing cow cheese
  • sauteed portobello slices
  • leftover roasted asparagus
  • sliced avocado

This was good! The asparagus was a little hard to eat so I think I would cut them into smaller pieces next time, but I loved the cheese with the mushrooms/asparagus/avocado. I ate the rest of the leftover asparagus that I couldn’t fit on the sandwich, too  🙂

Plus some other “sides”:

and a small handful of pretzels – about half a serving, probably?

I felt a lot better after eating lunch – that seemed to get me back to normal after my almost-fainting incident.

I really liked this lunch, but it was lacking in protein and I was feelin’ it this afternoon. I was so hungry!

I had about 2 Tbsp of crunchy pb and about 1.5 cups or something ridiculous of celery. Yum.

Around 4:30 today, the skies decided to open and just dump all the water they were holding! All of a sudden, there was this huge crack of thunder and then you could hear the rain pouring down on the building. Of course, I left my rain jacket in the car at lunch since it was all nice and sunny at noon today – I got soaked just walking from the office door to the car door! It rained really hard the entire way home and finally let up a bit by the time we got to the chiropractor. Everything went well there, but she had to use the hammer tool thing on my neck and I hate that thing.

We ran to the store after the appointment for mroe bread for Nick and some chocolate chips for a baking project tonight  🙂  It smells amazing! I can’t wait to try it.

Even though I wasn’t sure how this meal would be on my stomach, Nick asked me if I wanted New River Grille, so we went there for dinner.

I didn’t get my normal, but I did still get onion rings – you just have to get them here! They’re so good! I got the blackened flounder with onion rings and green beans. Not the healthiest dinner, but it was good and just what I wanted. And I’m still feeling good!

I’ve got to get my lunch packed for tomorrow before I forget!

Napping in 3….2….

Alright, there’s a lot of cuddling and napping going on without me right now, so I’ve got to be quick 🙂

We didn’t have time to make coffee this morning since Nick was doing the sound at church today, so I went and got a mocha before church started.

Unfortunately, we’re both having some small tummy issues. The same thing happened the last time we went to Honduras, so I hope the Honduran mystery illness doesn’t last long. Neither one of us feel bad, but our stomachs are just acting up and being strange.

I had no clue what I wanted for lunch today, so I just had a little of everything. Nick decided to make a BLT and I just couldn’t think of having bacon again, which was weird because a BLT was the only thing that sounded good to him!

I had a salad with the last of the sale greens I got yesterday, one of our garden tomatoes and a little bit of ranch dressing. These tomatoes are so good – I wish we could have them all year round.

I made a tiny grilled cheese sandwich on my new bread and a few pickles on the side. Then, since I was still a little hungry, I had a serving of these new Salt and Vinegar Baked Kettle Chips I got yesterday.

I love these baked kettle chips! I’ve tried the regular salted ones before, but this was my first bag of an actual flavor. I can’t wait to try the salt and pepper, cheddar and bbq.

Now, if you’ll excuse me….I need to put another load of laundry in and join these two before I miss out on the naps  🙂

Out, Then In

Ah…Friday night  🙂

What is better than just knowing you don’t have to get up and go to work the next day? Not much.

Nick and I went out for lunch today at a relatively new place here, Bull & Bones.

I think one of my favorite things about this place is that they don’t bring out normal bread or yeast rolls. Oh no.

They bring out this pretzel bread with some of the best mustard I’ve ever had. I wish the pretzel rolls had a bit more salt, but they’re so, so good and a great change from regular bread. This mustard is tart and spicy – it has a nice kick, which I like.

I ordered the club sandwich on wheatberry bread, but got their roasted veggies instead of chips.

I ate all my veggies, one of those pretzel rolls  :), and half my sandwich. The other half will make great leftovers for Nick or I this weekend! Instead of mayo, it had an apricot chipotle spread on it – I loved the sweet/spicy aspect of that with the smoked cheddar, turkey, and ham.

I also had more watermelon when I got back to my office.

The last of it, finally! I’m actually sad it’s gone! I may need to buy another one for this week.

One of my coworker’s friends and her husband came by today with their 3.5 week old baby boy and he was adorable! It was so fun to hold him – he is probably one of the cutest babies I’ve ever seen. It was a nice way to drain away a bit of Friday afternoon.

Thank goodness, it was not raining when we got home. In fact, it didn’t rain today at all even though it was super gloomy.

But I was not in the mood AT ALL to run. Not one bit.

But we went anyway.

Now I’m glad that we did because we have a bunch of stuff to do tomorrow and we probably wouldn’t be able to go. I felt good once we were done, but it was tough today. I felt slow, my legs were heavy and tight from all the yoga the past 2 days, and my arms were hurting at the end of the run again (from yoga). The funny thing is that “slow” for me today is still faster than “slow” at this point last year – I just forget that when we’re actually running  🙂

We had those Alpine Mushroom Pasta leftovers tonight – yum.

I really like this dish a lot! I’ll have to remember this one for the future. It was so easy and quick to make.

Unplanned Lunch

Happy lunchtime! I’m so glad today is the last day of the work week for me! This weekend is going to be crazy and fun and go by way too fast – I already know it.

Work was good this morning. I had another class to go to for that new system and this one was useless! It was the one they told me to go to so I could learn how to do the one thing I need – well, it wasn’t covered at all. Not even on the schedule.

So, I wasted 1.5 hours in that class. I guess it at least got me out of the office for a bit, but I hate that! I like going to classes if I’m actually learning things I need to know, but this did not help me one bit.

I packed my lunch for today, but Nick wanted Substation….and I changed my mind once we walked in and I could smell the food  🙂

I got the special today – ham, turkey, and cheese on their awesome wheat bread with lettuce, tomato, onion, oil/vinegar, oregano, salt and pepper. Mm…they make the best sandwiches. WAY better than Subway.

I also had some baked chips + unsweet tea.

Plus, now I have the lunch I packed for sometime this weekend or to freeze for another time.

I’m about to dig into these while I catch up on my emails from this morning.

Kayak Klutz Gets Krazy

Kayaking was fun today, but there were a few spots, which I will refer to as “rapids“, that we weren’t expecting. We had to stop a few times and dump water out of the kayak because of the “heavy white waters”. I’m using those words to make me feel better about my little freakout when we went over the little drop on the first “rapid”. We had never been on that part of the river, so we weren’t sure what we would run into. Except for that first one, it turned out to be a fun trip.

Then, the klutz in me came out. At the last possible moment. We were coming up to the boat ramp to get out of the river and I went to jump out and pull the kayak in….too bad the river was deeper than I thought still, so one leg went over and my body just followed until I fell completely in.

Not too bad right? It wouldn’t have been if there weren’t 20 or 30 people waiting right on the ramp to get in and get rafting! Oh well. My embarassing moment for today is now complete, I guess  🙂

When we finally got back from picking up the other truck, we were both smelly + starving!

We had 2 of the sweet pepper chicken sausages leftover, so I had Nick grill those along with some red onion and yellow pepper and had him toast up some bread, too.

I was going to make mine into one huge sandwich, but the bread wasn’t big enough and there was just too much stuff, so I had two very messy open-faced sandwiches. They were awesome!

  • whole grain bread from Amish market
  • laughing cow cheese spread on both slices
  • lettuce

  • grilled red onion
  • grilled yellow pepper
  • 1 chicken sausage, split in half between the two

I also ate the rest of the tomato and some baked kettle chips. This was great re-fueling.

I was so excited for my lunch – I don’t know why, but I’ve been looking forward to it since I packed it this morning.

I finally opened my jar of Cinnamon Raisin pb today, so lunch had to include that:

I put about 1 Tbsp on each slice of bread this morning, topped it with half a sliced banana, and just waited to dig in.

This was so good. I loved all the cinnamon in the pb, and with the banana? I’m definitely going to have this again.

To get some veggies and some more fruit, I had a Super Fruity Salad, which I think is a cousin to the HJ? She is big and beautiful, that’s all I know.

This had:

  • romaine
  • broccoli slaw
  • 1 tomato
  • random 1/2 cup of fruit (kiwi, berries, peach, 1 raspberry)
  • dressing made up of a little olive oil (less than a tsp, probably) raspberry vinegar, and dijon

I used to think pineapple was my favorite salad fruit, but the peach on this was so good! I can’t wait to get super fresh ones from the market this summer.

No, but I wish I did! I don’t think my boss would be too happy about it. Nick and I do like taking Sunday afternoon naps – they’re the best!

reading! I just finished my Masters in December, so I started a pile of books for me to read once I was done and homework was over. I’m finally starting to get through them and I love it.

To Fly! Then I could go wherever I wanted.

Fall. I love all the leaves changing here, and being perfectly comfy in jeans, a long sleeved t, and flip flops. Plus, it’s college football season!!!

5:30-6 am.

What is your most challenging goal right now?

Figuring out how to balance my life without a program or rules – there will be more on this later  🙂

Clubbin’

I feel like this weekend is super long for some reason – I hope it keeps going for the rest of the day. We have a bunch of stuff to get done in the house so I hope the time doesn’t go by too quickly! I have some other fun plans for dinner + dessert tonight, too  🙂  This has just been a super fun weekend!

Ever since I saw this recipe in a Rachael Ray magazine on our road trip a few weeks ago, I’d been waiting to make it. Today was the day!

Strawberry Chicken Club Sandwich

We didn’t make ours triple deckers and I only used about 1 Tbsp olive oil mayo in the avocado mayo mixture, but the rest is pretty much the same!

I had one and a half slices of bacon on mine, broken into pieces. We also used romaine instead of spinach and rotisserie chicken.

Mashed avocado is so good on sandwiches. I need to remember to use it more. We both loved the strawberry + avocado + bacon flavors on this sandwich – definitely a keeper recipe.

We also cooked up some fresh corn on the cob I got at the store today – I had one half and went back for more.

 I can’t wait to make this sandwich more – this was a great summery meal.

 I guess I’ve got to get off my butt and do something – we’ve got to move all the furniture out of one room to put a rug down, plus clean the house and finish laundry.
