I love these long summer nights.

The weather is perfect – it’s the type of weather where it doesn’t feel like anything.

Not hot, not cold. Just perfect.

Any summer weather is good for grilling, but tonight was prime.


I picked up some steaks today for Nick to grill – I’m not sure what he put on them, but they were awesome! Great flavor and cooked perfectly.


While he grilled, I cooked the corn and cut up some of our tomatoes for the salad. Nick cut the lettuce for me since I was also working on the potluck dishes for tomorrow.

It was a great dinner! This local corn has just been so sweet this summer – I’ve got to get more next week.


While the food for tomorrow was cooking (one on the stove and one in the oven), I sat outside on the deck and read ONE of the books I’m in right now. Have you read Animal, Vegetable, Miracle? That’s the one I’m working on now. I started it a while ago, but never finished. I love the book and it gives me some great ideas, but it also just reminds me of how much I’m not doing – does that make sense? I really like it, though. And I like that their farm isn’t too far from here! I’m hoping we can go to the store there sometime – that would be a fun little day trip.

I’ve got the main dish done for tomorrow – kind of a vegetarian enchilada pasta dish I made up. I made some extra for us to have for lunches or leftovers this week, so I’ll post the recipe soon. It looked and smelled good, though! I can’t wait to try it tomorrow.

I also made a bigger batch of the cookie-topped brownies to take  🙂  It definitely smells good in the house now.

Speaking of those brownies…

Run, Rain, Repeat

Thursday is over! I am so happy this weekend is almost here – we have some fun anniversary plans for this weekend and I can’t wait!

The weather stayed pretty decent most of the day – it was really cloudy all day, but of course, it started pouring as soon as we got home. Thankfully, it stopped not too long after so we went out for a run around 6:30. The sky still looked pretty scary, but it only drizzled a few times while we were out.

Weather wise? Pretty good.

Run wise? Blech. This was probably the worst run I’ve had in a while. I had pretty bad side stitches for most of the run – I didn’t stop, and I’ve still been just trying to breathe through them and they do go away, but they just kept coming back today. It wasn’t horrible, but it wasn’t great. It did feel good to be outside, though.

Dinner tonight was a repeat of last night with a few changes.


I had Nick grill 2 steaks last night (about 1 lb. total) so we split one steak last night and split the other one tonight for our salads. The only thing we had to do tonight was put the rest of the salad together – easy!

Tonight, mine had:

  • 2 cups romaine
  • 1 cup broccoli slaw
  • 1/4 avocado
  • 1 roma tomato
  • 1-2 Tbsp red onion
  • 4 oz. or so of steak
  • Thai dressing from recipe
  • orange slices
  • scallions


I liked this salad even more with the tomato and avocado – I think I’ll use those on this salad from now on. And yes, those are my pajama pants  🙂  I am not going to get into a different outfit after running/showering. Don’t pretend you don’t do the same thing.

Despite being super sore, I was able (with a lot of Nick’s help) to get everything done we needed to this weekend, including cleaning the house, finishing the laundry, mowing the grass (that one was all Nick), prepping for this week, and completing our baking projects.

I finally finished the laundry a little bit ago and finished cleaning up the kitchen from baking while Nick vacuumed for me – I just couldn’t lift/move it, so he helped out a lot with that. Love him 🙂

Dinner tonight was pretty easy. Since I had the oven on already for baking, I threw 2 sweet potatoes in the oven for us and Nick grilled some strip steaks that I got on special and some romaine for a quick, chargrilled salad.


I love grilled romaine – we just slice an entire romaine heart in half, lengthwise, drizzle a little oil on it and some salt and pepper and grill for 2-3 minutes. you don’t want it to get soggy, but it heats it up and gives a nice smoky, grilled flavor.


My new thing with sweet potatoes is just a little salt and some cinnamon – I can’t get enough! I’m always sad when I take the last bite of my sweet potatoes. I would just about put cinnamon on anything, though. I love it.


Baking Projects:

The first baking project I made today is actually a recipe I saw on 101 Cookbooks and I’ve been dreaming about it ever since.


Carrot Cake

I’m not sure how….but I haven’t even sliced into this yet. I think I was just so focused on getting all the laundry done that I forgot about this once I took it out of the oven and started on the other baking project and dinner.

This hasn’t been iced yet, and I think I may just wait and ice each slice so we can add however much icing we want  🙂 This bread smelled amazing while it was baking. 

I did make a few modifications:

  • I cut out the butter – I wanted to see how it would be without. I just soaked the dates in a little hot water instead.
  • I added a splash (1 Tbsp? or s0) of orange juice

I’ll make sure to post more pictures and a real review once I try it  – as good as it smelled, I’m sure it will taste even better.


Baking project #2 will have to remain a bit of a mytery – I’m working on a cookie recipe for a contest, so I can’t tell you exactly what is in them, but they turned out much better than I thought they would!


Nick and I both tried them, and I think they need a bit of tweaking on the sweetness factor, but the texture is amazing and I love everything else. I think once we figure out the sweetness, these will be perfect  🙂  And they’re super healthy, which makes me happy.


Well…for having pain meds in my system, this post didn’t turn out too bad! Sorry for any typos there might be or weird stuff I might not have noticed  🙂  I’m going to let the pain meds kick in while I finish watching Iron Chef and call it a night.

My Thankful Thursday

How has your Thursday been? I’m so happy tomorrow is Friday – I am ready for the weekend. We’re supposed to have beautiful weather this weekend, and I can’t wait!

Work, work…I had a better day today. Maybe knowing Friday is so close?

Lunch was a black bean burger over some whole wheat couscous


and some green beans



Originally, there was also an apple planned for my lunch, but Nick and I decided to go get smoothies today. I’m happy we did!


I got the kids’ size of the Cran-Strawberry. This beauty had: cranberry and strawberry juice, strawberries, blueberries, and some orange sherbert. It was so good! I can’t wait to try another flavor. The kids size is 12 oz, and it was the perfect amount. I don’t think I could drink anymore than this at one time.

It was about 56 degrees when we got home so we went for a run. Nick ran a bit slower with me today and that seemed to help a bit with the cramps, but I still ended up having them for the second 1/2 of our run. I don’t know what else to do / try. I did not eat a banana today, and I tried not  to drink too much water or eat anything after 3 so I wouldn’t have too much stuff in my stomach. Ah…so frustrating.

Now dinner….I was excited about dinner.

I pulled some steaks out of the freezer and Nick grilled them along with some red onion.


I made sure to take a picture of it before I sliced mine  🙂

I made a big salad with this steak and loved every bite.


  • 3 cups lettuce
  • 1 tomato
  • grilled red onion, chopped
  • 4 or so black olives, sliced
  • about 1 Tbsp feta
  • 3 or so oz. steak, diced
  • homemade dressing: 2 tsp olive oil, 1 tsp red wine vinegar, 1 tsp dijon, salt, pepper, oregano

Perfect way to end today.

So….why is today a Thankful Thursday? Well, I was reading Polly’s post today and thought that would be a good thing to focus on, especially since I need to get myself out of this funk about the job.


– I am thankful that I have a job and insurance

– I am thankful for my husband

– I am thankful that I am able to run, even when it’s not so fun

– I am thankful for food in the fridge and a good, healthy dinner

– I am thankful for my family and friends

– I am thankful for everything I’ve been given that I don’t deserve

– I am thankful for the One who accepts me as I am

– I am thankful for this blog for making me more creative and open, and for all of YOU – all the new friends I’ve made, ideas I’ve found, and this great community 🙂

Welcome Back, Grill Master

First – I think I am done working on my presentation!  I’m about as ready as I can be, so let’s hope it goes well tomorrow  🙂  Any luck you can send me would be great!


I was so antsy today at work and couldn’t concentrate. I was really happy I packed a snack to keep me occupied.




0% fage, pom, and some TJ’s high fiber cereal with the dried fruit and nuts in it. A great mix, indeed.


Check out these awesome spoon/fork/knife things Nick and I got!  I was so tired of buying plastic silverware just to throw it away, but these are perfect!




I have the green, he has the blue.


We were planning on running tonight after work, but I knew I needed to finish my presentation AND practice it tonight, so we skipped the run. I’m sad, but I know I’ll be happier about it tomorrow when I’m giving the presentation.


Nick finally got to use his Grill Master skills tonight – it’s been so long since we’ve cooked anything on the grill. I was so happy the weather cooperated for our dinner tonight, because it was amazing.

We both had a salad to start and get some green!  Mine had romaine, carrot, tomato, and 1/2 Tbsp real ranch dressing. You just can’t beat it.





Plus steak!, my leftover veggies from lunch, and some barley/brown rice pilaf. I ate a little less than half of my steak, and saved the rest so he can have steak and eggs in the morning.





Since I’m done working on my presentation for tonight, I’m going to finish some laundry, catch up on blogs, and get ready for THE OFFICE – I hope you’re watching tonight! It’s going to be a good one  🙂

We love to grill, and Nick has probably missed it more than I have!  We use it a lot when the weather is nice – I can’t wait to really start using it again! I’ll eat just about anything off the grill.
