Beautiful Mess

What a way to start the day: good food, good company, good music.

I made myself a note yesterday afternoon to mix up some muesli for this morning and I actually did it!

Everything in this was good, but the peaches + raspberries from the market were definitely the highlights.

The base I made last night had:

  • 1/2 cup oats
  • 1/2 cup skim
  • Honduran vanilla
  • cinnamon
  • pinch salt
  • a tiny squeeze of local honey

Then this morning, I stirred in:

  • about 1/2 cup plain yogurt
  • 1/2 peach, chopped
  • handful raspberries + strawberries
  • 2 Tbsp of our new favorite trail mix: cranberries, almonds, dark chocolate

I love bowls of muesli because they’re not supposed to be pretty all the time, yet they still are even when they’re a mess. A beautiful mess of good ingredients.

I made Nick some last night too, so we’re sitting here eating our muesli together and listening to an Avett Brothers cd.

Reunited

It has been way too long, my friend.

It has been over a week – actually close to 2 weeks – since I’ve had oatmeal or oatbran! Way too long in my opinion, but those were not options for breakfast in Honduras.

I was so hot when I got out of the shower that I almost changed my breakfast plans, but I pushed through the heat and am enjoying every bite  🙂

  • 1/2 cup oats, 1 cup water, pinch salt
  • 1/2 banana, sliced
  • 1/4 -1/2 cup frozen mixed berries
  • cinnamon!!!
  • 2 Tbsp of a new trail mix we got: cranberries, raisins, almonds, dark chocolate

One secret I have to eat oatmeal if I really want it but am already hot? I stir in frozen berries. The cold berries cools down the oatmeal juts enough so it’s not super hot, and the oatmeal thaws the  berries enough to eat.

If I could find a way to put dark chocolate in my breakfast every day, I would.

I have so many fun pictures today! Both fun to look at and ones that were just fun to take  🙂

But first! Look what we saw while we were eating lunch!!!

Little known fact about me: I. love. groundhogs.

I know, I know….they dig up yards, yadda, yadda. We don’t have them in our yard, though, and I just think they are so cute and pudgy and fuzzy and I get so excited whenever I see them around here. My record so far is seeing 8 in one day! Impressive, huh?  🙂

We also ran over to Sonic at lunch because I really wanted a light cherry limeade for some reason, so that’s what I got. I hadn’t been to a sonic in forever. I actually used to go just about every afternoon in college for their “happy hour” 1/2 price drink specials. That’s where a lot of my laundry quarters went, no surprise.

It hit the spot and was a great way to end lunch.

I brought a good snack today since I knew I would be running after work. I bought this new trail mix the other night and brought it to have with my last Oikos! 😦 Please, Oikos, go back on sale! I just can’t afford you at your normal prices.

This trail mix has whole raw almonds, slivered almonds, raisins, craisins, and dark chocolate chunks – it was the perfect yogurt topping. I can’t wait to try it on oatmeal!

We had a good run today. We actually ran over the river on this pretty steep bridge, so my pace was a little slower on the way out than it was on the way back in. I was so excited today because I looked at my garmin on the way back DOWN the bridge and my pace was 8:22! That is crazy! I haven’t run that fast since like 5th grade. I can’t keep it at that pace yet, but it’s nice to know that it wasn’t horrible being there, you know?

After getting back, stretching, and taking showers, I got started on a quick dinner.

I was so happy to be able to use this beautiful rainbow chard I got from the market.

I found this great sounding stew in one of my Eating Well magazines, but I modified it to be more of a “one pot” dish than a stew – it turned out great!

I mostly followed the recipe, using a huge bunch of my rainbow chard which wilted down like crazy!

The only difference is that I added 1 cup of Israeli couscous to the boiling water/broth and let that cook almost all the way before stirring in the chard. Serve once the greens are cooked. Easy!

The flavors in this dish were awesome with the chard. The chile paste made it spicy, and I love the warmth that ginger gives to a dish. Definitely a keeper.

Then, my strawberry sundae happened.

But it wasn’t any sundae.

It was life changing.

That’s right – I made Gena’s banana soft serve after seeing and hearing all the rave reviews.

This stuff was so good and super creamy! I cannot believe that this is only bananas. It really has the texture of soft serve ice cream.

I topped mine with some chopped strawberries + a tsp of carob chips.

This recipe is definitely going to be used a lot – I can’t wait to try it with more toppings + flavors! Thanks Gena! I will definitely have to remember to freeze more bananas from now on.

Of course, after that I’m freezing so I’m about to have some hot tea and read until I fall asleep  🙂

Sweet Start

Isn’t it crazy how one week can be so different from the next?

Last week, I was getting up early to do yoga and this week….I do not want to get out of bed at all!  🙂  I guess I’m resting back up after our fun weekend, but I have been lovin’ that snooze button this week.

So, no yoga this morning, but I am having a good breakfast to jump start my day.

I finally used the very end of my bag of the TJs nuts over rapsberries mix – I guess I was holding out!

It’s a good thing they opened a TJs not far from my parents – I’m thinking I’ll need a trip there the next time I’m home.

This bowl had:

  • 1/2 cup oats, 1 cup water, pinch salt
  • 1/3 banana, sliced
  • handful strawberries and raspberries
  • about 2 Tbsp nuts over raspberries mix
  • 1 tsp mini chocolate chips since there was only one left in the mix!

I’m off for another busy day at work, especially this morning. I have to finalize those packets and get them mailed out first thing – I think I got most of it put together yesterday, so I should just have to check through each packet to make sure it’s complete and then get them in the mail.

Are your weeks / days basically the same schedule-wise, or do they change?

bowl of oatbran…  For some reason, I have Johnny Cash stuck in my head this morning while eating breakfast. We did listen to him on our trip last weekend, but it’s strange how a song will just randomly pop in your head out of nowhere, right?

I went back and forth this morning trying to decide whether to have oats or oatbran. Oats or oatbran. I already knew my toppings, so I just had to make a decision and I’m glad I chose oatbran. I hadn’t made a sweet oatbran in a while!

  • 1/3 cup oatbran, 1 cup water, pinch salt
  • 1/2 banana, sliced
  • cinnamon
  • handful fresh raspberries
  • 3 Tbsp TJ’s Nuts over Raspberries trail mix

I only have like 1 spoonful of this mix left!!! Does anyone know if Trader Joe’s delivers?  🙂

I’ve already been reading more of my MHClark book this morning and I can’t wait to get in the car so I can read more on the way to work. I love just being able to get totally swept up in books.

Burning Eyes

I don’t know what was going on with my contacts this morning, but the first 2 times I tried to put them in, my eyes just started burning horribly! My eyes were tearing up and I had to take them back out (which is not fun when your eyes don’t want to open). I ended up just taking my shower without my contacts and tried again once I got out. My right eye is still bothering me a little, but not nearly as bad as before. It was so strange! I don’t know what happened. They felt fine all day yesterday and even when I took them out last night.

Nick and I are both having a nutty breakfast this morning:

Mine had

  • 3 Tbsp TJs nuts over raspberries mix (chocolate chips saved for top)
  • 3 strawberries chopped

I don’t know that you can beat melted chocolate for breakfast – it’s just the best way to start your day.

Did you get your taxes done? We mailed ours today at lunch – time just got away from us with getting them done! But we made it. Now we’re just waiting for our check  🙂

I’m so happy today is Wednesday – I feel like the weeks go by so slowly, but it seems once Wednesday is over, it speeds up a little.

Wednesday is also BodyPump day for us, so I made sure to pack a good snack for this afternoon.

I had my last Oikos – a plain one – with some TJ’s nuts over raspberries trail mix. After trying the plain, vanilla, and blueberry Oikos, I think I would put them in this order:

1. Plain

2. Blueberry

3. vanilla – again, just because I don’t like the mix of vanilla and tart – I want it sweet, and I can’t get my head to get around that!

Overall, I really liked the Oikos yogurts! I hope I can find them more often here, because they are cheaper than Fage and I can’t always find those, either. Thanks again for the coupons, Kristina!

 

BodyPump wasn’t packed tonight, which was nice. I at least felt like I had room to move around a bit. Everything was pretty normal, but the ab track tonight was awesome (aka, painful). Sometimes I feel like I don’t really get a good ab workout in that class compared to how the other tracks are (arms, squats, etc) but tonight’s was great! I was hurting pretty bad by the end, but in a good way.

We got home, showered, and heated up some stir fry leftovers from last night with some more edamame

I love having good leftovers in the fridge to heat up on busy nights. It makes it so much easier to go work out after work and get home later than normal – just knowing we already have dinner waiting helps keep me from making excuses.

Now, I’m just sitting in my pajamas waiting on my baking project for tomorrow and waiting until LOST comes on!

I’ll give you some hints for the new project. It includes both of these items:
